1/2 pound Emmental or Gruyère cheese, sliced by hand into thin triangles
1 fresh, crusty baguette
1 or 2 ripe tomatoes, sliced
1/3 pound bloomy rind goat cheese, such as Bucheron
1/3 pound French-style ham, optional
1/2 teaspoon herbes de Provence
1 small handful of fresh arugula, optional
2 tablespoons extra-virgin olive oil, optional
1 tablespoons minced parsley
1 1/2 tablespoons red wine vinegar (just eyeball it)
1/2 teaspoon Dijon mustard
1/2 teaspoon kosher salt
12 turns fresh black pepper
2 anchovies
2 tablespoons minced shallot (about 1/2 of one shallot clove)
4 tablespoons olive oil, divided
1 fresh, crusty baguette
1 6.7 ounce jar of Italian oil-packed tuna, drained
1/2 bell pepper, red or green, sliced very thin
1 small handful raw haricots verts or green beans, cut into 1-inch pieces.
1 large handful arugula (about 1 ounce)
2 hard-boiled eggs, peeled and sliced
10 to 12 pitted black olives, preferably Niçoise, chopped
1 tomato, sliced

Steps:

  • Slice the baguette in half lengthwise, almost all the way through, and open.
  • Slather both sides with the butter. Layer with the ham and cheese. Close, press, and divide into two or three sandwiches.

Tip: Suggestions for weighing down the pan bagnat: the bottom of a cast-iron skillet, or sheet pan with heavy cookbooks on it. Slice into halves or thirds, and serve. Note: If the sandwich will rest for more than two hours, wrap it in plastic wrap and refrigerate. Before serving, allow to return to near room temperature.

Steps:

  • In a medium bowl, mix the ground beef, bread crumbs, parsley, egg, salt, and pepper.

2 loaves french baguettes (about 9-inch long), halved lengthwise and middle scooped out
2 slice bacon, finely chopped
1 lb lean ground beef
1/4 c red onions, finely chopped
1 large clove garlic, pressed
1 can(s) (10 oz.) cream of tomato with basil & parmesan
2 tsp worcestershire sauce
2 tsp hot sauce such as cholula®, or more to taste
1/2 tsp ground cumin
freshly ground black pepper, to taste (i always use mixed peppercorns)
1 large tomato, washed and thinly sliced
1 c sharp cheddar cheese, grated
1/2 Tbsp fresh parsley, chopped

Steps:

  • 1. Preheat oven to 350ºF. In a large skillet over medium heat, add bacon and sauté until half cooked. Add ground beef and cook. Add onion and sauté until translucent. Add garlic and sauté for 1 minute. Add cream of tomato, Worcestershire sauce, Cholula, cumin and black pepper. Stir all the ingredients very well and bring to a simmer. Cook for 5 minutes.
  • 2. Meanwhile, cut baguette in half lengthwise and scoop out bread. Place halves on a baking sheet lined with silicone mat; set aside.
  • 3. Scoop the tomato-beef mixture into the center of each half. Cover with tomato sliced and then cheese. Sprinkle fresh parsley over top. 2 cups spinach leaves

6 hard-boiled eggs, cooled and shelled
2 cups watercress, trimmed and chopped
