CHEDDAR-STUFFED TURKEY BURGER WITH AVOCADO

Cheddar-Stuffed Turkey Burger With Avocado image

The secret to keeping lean turkey juicy as a burger? Adding fat. The burgers in this recipe, stuffed with cheese and a bit of butter, are moist, flavorful and, best of all, hold together and flip easily. These are best cooked on a flat-top griddle, burger-joint style, or you can use a large, wide skillet (like cast-iron) if that's what you have. Both give the outside of these burgers an irresistible sear that keeps the juice and flavor inside the burger, not dripping through grill grates. Finally, Hawaiian buns are a must. Their softness and subtle sweetness give these burgers a universal appeal.

Categories     dinner, lunch, weekday, burgers, main course

Time 25m

Yield 4 servings

Number Of Ingredients 11

1 1/4 pounds lean ground turkey
1 teaspoon kosher salt
1/2 teaspoon black pepper
1 teaspoon dried parsley
1 egg, lightly beaten
1 tablespoon milk
2 tablespoons butter, plus more for cooking
5 (1-ounce) slices sharp Cheddar or horseradish Cheddar
4 Hawaiian hamburger buns
1 to 2 firm-ripe avocado, thinly sliced
Mayonnaise or other burger toppings (pickles, lettuce, tomato, mustard), to taste

Steps:

  • Combine the turkey, salt, pepper and parsley in a large bowl and mix with a fork or clean hands to season evenly. Add the egg and milk and stir to combine.
  • Divide the meat into four portions with damp hands and gently pack into four round patties, about 3/4-inch thick. (It will feel very sticky because of the egg, which helps burgers hold their shape as they cook.) Place burgers on a parchment-lined baking tray or plate. Cut the butter into slices and 1 slice of the cheese into 4 thin squares, about 1 inch across. (The butter and cheese should be the same size.) Press a piece of each into the center of each burger. Shape the meat around it to cover across the top. Refrigerate for 10 minutes while you prepare the griddle.
  • Heat a flat-top griddle or cast-iron skillet over medium-high heat. Add enough butter just lightly coat the griddle or pan. Add the burgers to the griddle and cook until browned and just cooked through and a thermometer inserted into the meat (not the cheese in the center) reaches 165 degrees, about 4 minutes per side. In the final 2 minutes of cooking, add the remaining 4 cheese slices to the burgers, to melt.
  • Remove the burgers from the heat and layer onto the buns with the avocado and any other burger toppings you desire. Serve warm.

AVOCADO STUFFED WITH SHRIMP

Avocado Stuffed With Shrimp image

Good friends introduced us to Avocado Surprise in Puerto Penasco so this is my take on it. I used Recipe#17293 to cook the shrimp. Could be an appetizer or summer luncheon dish. Preparation includes 1 hour to chill. You could also make the shrimp salad aspect earlier in day as I have done. After looking at Sarah_Jayne's review, I agree that the salad aspect is slippery so have changed the directions a bit so it "works" better.

AVOCADO STUFFED WITH CRAB-MANGO SALAD

Avocado Stuffed with Crab-Mango Salad image

Provided by Daisy Martinez

Categories     main-dish

Time 25m

Yield 6 servings

Number Of Ingredients 9

1 lime, zest finely grated, lime cut in 1/2
2 tablespoons olive oil
2 tablespoons chopped cilantro leaves
1/2 mango, peeled and cut into 1/4-inch dice (about 1 cup)
1/3 cup diced (1/4-inch) red bell peppers
1/3 cup diced (1/4-inch) red onion
1/2 jalapeno, stemmed and cut into small dice (about 2 tablespoons)
1/2 pound jumbo lump crabmeat
3 Hass avocados

Steps:

  • Squeeze the juice from 1 half of the lime into a bowl. Add the olive oil and cilantro and whisk well. Add the mango, red pepper, onion, jalapeno, and lime zest and toss to coat. Gently stir in the crabmeat to keep it from breaking up. Set aside while preparing the avocados.
  • Cut the avocados in half and remove pit. Squeeze the remaining lime half over the avocado flesh, using the lime half to spread it evenly, in order to keep them from turning black.
  • Toss the crab salad, check for seasoning, and mound into the avocado halves, dividing it evenly. (Use an ice cream scoop for neat, even rounds, if that's your thing.) Serve right away.

AVOCADO STUFFED WITH CRABMEAT MAISON, OR COLD CRAB SALAD

Avocado Stuffed With Crabmeat Maison, or Cold Crab Salad image

I made this recently when our supper club decided to brunch instead of supper; everyone loved it. The recipe comes from a cookbook from one of the oldest and most loved New Orleans fine dining restaurants (Galatoire's); it would be perfect for any brunch or luncheon. It calls for iceberg lettuce, which I usually hate, but they insist on using it b/c the dressing works better, so I did. Also, use very good crabmeat. I am not including the dressing recipe in the ingredients/directions b/c it makes more than you need for this salad, but I am writing it out here b/c it is simple and necessary (and you will want to drizzle it on the finished salad): Creole Mustard Vinaigrette 1/3 c red wine vinegar, 1/2 c creole mustard, 2/3 c vegetable oil, salt and pepper to taste, whisk together in small bowl.

Provided by larchie

Categories     Crab

Time 4h

Yield 8 serving(s)

Number Of Ingredients 15

2 large egg yolks
2 tablespoons red wine vinegar
1 tablespoon creole mustard (or 1 tablespoon any coarse grainy brown mustard)
1 teaspoon lemon juice, fresh
1 cup vegetable oil
1/4 cup nonpareil capers, drained
1 bunch green onion, chopped
1 tablespoon parsley, curly, fresh, chopped
salt
white pepper
1 lb lump crabmeat
4 avocados, ripe and soft
creole mustard vinaigrette (see above)
1 head iceberg lettuce, cut into large ribbons
2 large tomatoes, fresh and cut into wedges

Steps:

  • Crabmeat Maison:.
  • Combine egg yolks, vinegar, mustard, and lemon juice in mixing bowl, and whisk together (until well combined); whisk in oil slowly until emulsified (this might work better in food processor, but I did by hand).
  • Fold in capers, parsley, and onions, and season with salt and pepper. Chill for 2 to 4 hours.
  • Shortly before serving, gently fold in crabmeat, taking care not to break any of the lumps; set aside.
  • Stuffed Avocado Salad:.
  • Slice the avocados lengthwise, and remove the pits. Peel and set the 8 halves aside.
  • Create a bed of lettuce on 8 chilled plates. Nest the avocado halves in the center of the lettuce covered plates.
  • Evenly divide the Crabmeat Maison into the cavities of the avocados, forming little mounds.
  • Add a wedge of the tomato to each plate, and drizzle with the Creole Mustard Vinaigrette.
  • Serve immediately.

Provided by Priscila Satkoff

Categories     Garlic     Potato     Vegetable     Roast     Vegetarian     Cinco de Mayo     Avocado     Root Vegetable     Poblano

Yield Makes 6 servings

Number Of Ingredients 21

2 unpeeled baking potatoes, scrubbed
6 poblano chiles, roasted and peeled
3 avocados, peeled, pitted, and coarsely mashed
3 tablespoons olive oil
1/2 tablespoon black peppercorns, freshly ground
Fine sea salt to taste
Roasted Garlic Cloves
18 plump garlic cloves
1 cup skim milk
1 tablespoon olive oil
Marinade
1 1/2 cups water
3 small cones piloncillo (Mexican raw sugar), crushed with a meat mallet, or 6 tablespoons packed dark brown sugar
1/4 cup olive oil
1 large yellow onion, halved, peeled, and thinly sliced
2 cups cider vinegar
1 teaspoon dried Mexican oregano
1 teaspoon black peppercorns
8 cloves
6 allspice berries
4 bay leaves

Steps:

  • 1. Put the potatoes in a medium saucepan and add lightly salted water to cover. Bring to a boil over high heat. Reduce the heat to medium-low and cook until the potatoes are tender about 30 minutes. Drain and let stand until cool enough to handle. Peel the potatoes and place in a medium bowl. Mash the potatoes, leaving them a bit lumpy
  • 2. Make a lengthwise cut in each chile and remove the seeds. Combine the mashed potatoes, avocados, olive oil, and ground peppercorns in a medium bowl and season with the salt. Stuff the chiles with the potato mixture. Place in a 9-by-13-inch baking dish. Cover with plastic wrap and refrigerate.
  • 3. To roast the garlic: Position a rack in the center of the oven and preheat the oven to 350°F. Bring the garlic and milk to a boil in a medium saucepan over medium heat, then boil for 3 minutes, taking care that the milk does not boil over. Drain the garlic in a sieve, discarding the milk. In a small bowl, toss the garlic cloves in the olive oil. Spread the garlic in a single layer on a baking sheet and cover with aluminum foil. Roast until tender and golden, about 20 minutes. Set aside.
  • 4. To make the marinade: Bring the water and piloncillo or brown sugar to a boil in a small saucepan over high heat. Boil, stirring often, until the sugar is dissolved and the water is reduced to 1 cup, about 5 minutes. Remove from the heat.
  • 5. Heat the oil in a medium skillet over medium heat. Add the onion and cook until it begins to soften, about 1 minute. Add the sugar water, vinegar, oregano, peppercorns, cloves, allspice, and bay leaves and bring to a simmer (do not boil). Remove from the heat, add the roasted garlic, and let cool completely. Pour the marinade over the chiles, cover, and refrigerate for at least 6 hours or up to 12 hours.
  • 6. To serve, remove the chiles from the refrigerator and let come to room temperature. Place a single chile on each plate, along with some of the marinade, including some of the onion and garlic cloves.

AVOCADO, SUN-DRIED TOMATO AND MOZZARELLA STUFFED CHICKEN BREAST

Avocado, Sun-Dried Tomato and Mozzarella Stuffed Chicken Breast image

I love experimenting with different stuffings for chicken. Here's another combination I've come up with that works really well.

Yield 4 serving(s)

Number Of Ingredients 14

4 whole chicken breasts
1 avocado, Sliced
8 sun-dried tomatoes (in olive oil)
150 g mozzarella cheese
8 slices prosciutto ham (These are to wrap around the breast. I always say 8 slices to allow for 2 per breast. Last night I c)
1 cup milk
1 teaspoon condensed chicken broth (powder, cube, paste etc.. My stock is quite dense, so you may have to adjust for taste depending on )
125 ml dry white wine
1 1/2 teaspoons cornflour
2 teaspoons Worcestershire sauce
3 teaspoons Dijon mustard
3/4 teaspoon brown sugar
1/2 cup cream
1 tablespoon fresh parsley, chopped finely

(quarter of cheese per breast). Fold breast over to cover, Wrap two slices of Prosciutto around each breast.

AVOCADO-STUFFED TOMATOES

Avocado-Stuffed Tomatoes image

Cute as a button... and tasty too! These are a simple, bite-size appetizer. I like to double the amount of filling to make sure there's plenty for each little 'mater.

Provided by Jeanne Benavidez

Categories     Fruit Appetizers

Time 30m

Number Of Ingredients 7

30 cherry tomatoes (about 1-1/4 pints)
2-3 medium avocados, pitted, peeled & cut up
4 oz cream cheese, room temperature
1/2 tsp garlic salt (or to taste)
1/2 tsp black pepper (or to taste)
1 Tbsp lemon juice
1 Tbsp onion, grated or very finely diced

Steps:

  • 1. Cut a thin slice from the top of each tomato so you can scoop out the seeds. (I also cut a very thin slice from the bottom of each tomato so they stand upright.)
  • 2. Using a small melon baller, carefully scoop out the inside of the tomatoes. Turn them upside down on a paper towel lined cookie sheet and let them stand for about 30 minutes to drain. You can either add the pulp into the filling mixture, or, if there are too many seeds, just discard the pulp.
  • 3. Meanwhile prepare the filling...put avocado, cream cheese, garlic salt, pepper and lemon juice in a food processor. Cover and pulse until smooth.
  • 4. Add the grated onion to the mixture and stir to blend. Spoon mixture into a piping bag with a round tip or a ziptop plastic bag (cut a small tip off of the plastic bag AFTER you spoon the mixture into it).
  • 5. Place the tomatoes, open sides up, on your favorite serving platter. Pipe the filling into the tomato 'cups'.
  • 6. Serve immediately or cover loosly and refrigerate for up to 4 hours.

CHICKEN AVOCADO AND MUSHROOM STUFFED VOL-AU-VENTS

Chicken Avocado and Mushroom Stuffed Vol-Au-Vents image

This is so simple to make and very yummy, I usually serve this in the really large vol-au-vent shells, but I could not get any, so I had to serve in medium ones. These are not ideal as you can not get much filling into them, I ended up pouring some of the filling over after taking a photo, so we were not eating just pastry cases with no filling, which is ok but does not look the most appealing. I usually buy the 12.5cm cases just so you can get an idea of the size compared to the ones in the photo.

Yield 4 serving(s)

Number Of Ingredients 11

4 (12 1/2 cm) pastry vol-au-vent cases (read note above with regards to the ones used in the photo.)
olive oil
700 g chicken breasts, cut into chunks
3 garlic cloves, crushed
300 g mushrooms, sliced thinly
1 leek, sliced thinly
1 (60 g) packet cream of chicken soup (The one I buy makes up 1 liter)
2 cups milk
1 cup chicken stock or 1 cup vegetable stock
1 teaspoon dried tarragon
1 large avocado, chopped

Steps:

  • Pre-heat oven to 180 degrees Celsius.
  • Heat oil in a pan cook chicken in batches until browned, remove and set to one side.
  • Heat a little more oil in the same pan, add leeks, garlic and mushrooms, cook until leeks and mushrooms have softened, return chicken to pan and removed from heat.
  • In a saucepan whisk soup powder with milk and stock, bring to the boil to thicken, stir in tarragon. (my packet mix requires one more cup of liquid than I use, so that I end up with a thicker version than a soup, to use as the sauce, so bear this in mind.).
  • Pour soup mix into pan with chicken and mushroom mix, stir to combine, gently stir in avocado.
  • Place spoonfuls of chicken mix into pastry cases, bake in oven for about 5-8 Min's until hot.
  • I served our with honeyed carrots and buttered spinach.

Tips:

  • Choose ripe avocados: For the best results, use ripe avocados that are slightly soft when pressed. This will ensure that the avocados are creamy and flavorful.
  • Use fresh ingredients: Fresh ingredients will give your stuffed avocados the best flavor. Choose ripe tomatoes, cilantro, and onions for the salsa, and use high-quality mayonnaise, salt, and pepper for the dressing.
  • Don't overstuff the avocados: When stuffing the avocados, be careful not to overstuff them. This will make them difficult to eat and may cause the filling to fall out.
  • Serve immediately: Stuffed avocados are best served immediately after they are made. This will prevent the avocado from browning and the salsa from becoming watery.
  • Get creative with your toppings: You can add a variety of toppings to your stuffed avocados, such as crumbled bacon, shredded cheese, or diced hard-boiled eggs. You can also drizzle them with a balsamic glaze or a spicy sauce.

Conclusion:

Stuffed avocados are a delicious and easy appetizer or snack. They are perfect for parties or potlucks, and they can also be enjoyed as a light lunch or dinner. With so many different variations to choose from, there is sure to be a stuffed avocado recipe that everyone will enjoy.
