Time 1h

Yield 10

Number Of Ingredients 8

½ cup butter
1 cup grated Parmesan cheese
3 (14 ounce) cans artichoke bottoms, drained
1 teaspoon lemon pepper
1 teaspoon garlic salt
8 ounces cream cheese, softened
1 tablespoon sour cream
2 tablespoons chopped fresh chives

Steps:

  • Preheat an oven to 325 degrees F (165 degrees C). Lightly grease a 9x13 inch baking dish.
  • Melt the butter in a small saucepan over low heat; remove from heat and set aside. Place the Parmesan cheese in a shallow bowl, and set aside.
  • Cut a thin slice from the bottom of each artichoke bottom so it will stand, and gently press your thumb into the center of each to form a depression for the filling. Sprinkle the artichoke bottoms with lemon pepper and garlic salt.
  • Combine the cream cheese, sour cream, and chives in a bowl, and mix well. Spoon about 1 tablespoon of the filling into each artichoke bottom.
  • Dip each stuffed artichoke bottom into the melted butter, roll in Parmesan cheese, and place into the prepared baking dish. Bake about 45 minutes in the preheated oven, until the tops of the artichokes are golden brown.

STUFFED CHICKEN BREASTS WITH ARTICHOKE HEARTS, FETA CHEESE, CAPERS, AND BLACK OLIVES

Stuffed Chicken Breasts with Artichoke Hearts, Feta Cheese, Capers, and Black Olives image

My 8-year-old and I love to cook together; here is one of our family recipes. The recipe calls for the chicken to be marinated for a few days, but that is a viewers' choice.

Time 9h

Yield 4

Number Of Ingredients 6

1 pound skinless, boneless chicken breast halves
1 (8 ounce) bottle Italian-style salad dressing
½ (14 ounce) can artichoke hearts, drained and chopped
½ (6 ounce) can sliced olives, drained
¼ (4 ounce) jar capers, drained
1 (4 ounce) container crumbled feta cheese

Steps:

  • Place the chicken breast halves into a plastic zipper bag. Shake the bottle of Italian dressing and pour into the bag. Seal the bag and shake to thoroughly coat the chicken with the dressing; refrigerate at least 8 hours or overnight.
  • Preheat oven to 350 degrees F (175 degrees C). Grease a baking dish with olive oil.
  • Remove the chicken breast halves and shake off excess marinade. Discard the leftover marinade. Place the chicken between two sheets of heavy plastic (resealable freezer bags work well) on a solid, level surface. Firmly pound the chicken with the smooth side of a meat mallet to a thickness of 1/2 inch.
  • Mix together the artichoke hearts, olives, capers, and feta cheese in a bowl; spoon about 2 tablespoons of the feta mixture into the middle of each flattened chicken breast. Roll each chicken breast around the filling and secure with toothpicks. Place the rolled chicken breasts into the prepared baking dish.
  • Bake in the preheated oven until the chicken has browned and the juices run clear, about 30 minutes.

Stuffed Artichoke Hearts image

Provided by Sandra Lee

Time 20m

Yield 8 servings

Number Of Ingredients 7

3 (14-ounce) cans whole artichoke hearts
2 scallions, finely sliced
1 cup shredded red cabbage
1 cup shredded carrot
1/4 cup Italian dressing
Kosher salt and freshly ground black pepper
1 tablespoon sesame seed, for garnish

Steps:

  • Pull out the center of the artichoke with your fingers to form a cup, and then slice a bit off the bottom to make a flat surface so the cups sit upright. Repeat with remaining artichokes. The artichoke centers can be used in a salad or omelet.
  • In a large bowl, toss together the scallions, cabbage, and carrots. Add the dressing, taste, and adjust the seasoning with more salt and pepper, if necessary. Fill the artichoke cups with the slaw, garnish with sesame seeds, and serve.

Tips:

  • Choose the right artichokes: Look for artichokes that are heavy for their size with tightly closed leaves and no signs of bruising or wilting.
  • Prepare the artichokes properly: Trim the stems and remove any tough outer leaves. Cut the artichokes in half lengthwise and scoop out the fuzzy choke in the center.
  • Cook the artichokes until tender: You can cook artichokes in a variety of ways, including boiling, steaming, or roasting. Cook them until the leaves are tender and the hearts are cooked through.
  • Stuff the artichoke hearts with your favorite filling: There are many different stuffing options for artichoke hearts, including bread crumbs, cheese, vegetables, and meat. Get creative and experiment with different flavors.
  • Serve the artichokes hot or cold: Stuffed artichoke hearts can be served hot or cold, as an appetizer or a main course.
