Steps:
- Preheat oven to 400°F.
- Cut just the top end of the garlic head off to expose the tips of the garlic bulbs. Place the garlic onto a piece of aluminum foil that will be large enough to wrap around the whole head. Drizzle the garlic with the olive oil and then wrap aluminum foil tightly around the garlic. Place the garlic into your oven for 30 to 40 minutes until the garlic has caramelized and softened.
- Reduce the heat of the oven to 350°F.
- Break apart the garlic head and squeeze out each bulb of garlic into the bowl of a mixer. Add in the cream cheese and mix the mixture until it is well combined.
- Spread the garlic cream cheese into the bottom of a small baking dish. Spread the pesto over the top of the cream cheese in a nice even layer.
- Slice all of the tomatoes in half and spread over the top of the pesto.
- Bake for 20 to 30 minutes until the cream cheese is bubbly.
- Serve with toasted baguette's or your favorite vegetables.

Tips for Making the Striped Pesto Dip
- Use fresh basil. Fresh basil has a more intense flavor than dried basil, and it will give your dip a vibrant green color.
- Toast the pine nuts. Toasting the pine nuts will give them a nutty flavor and make them more fragrant.
- Use a food processor. A food processor will make quick work of chopping the basil, pine nuts, and Parmesan cheese.
- Add the olive oil slowly. Drizzle the olive oil into the food processor while it is running. This will help to emulsify the oil and create a smooth, creamy dip.
- Season to taste. Add salt, pepper, and garlic powder to taste. You can also add a pinch of red pepper flakes for a little bit of heat.
Conclusion
Striped pesto dip is a delicious and versatile appetizer that is perfect for any occasion. It is easy to make and can be tailored to your own taste preferences. Serve it with crackers, vegetables, or chips, or use it as a spread for sandwiches and wraps. No matter how you serve it, this dip is sure to be a hit!
