3 tablespoons unsalted butter
5 large shallots, thinly sliced
2 sprigs fresh thyme
Kosher salt and freshly ground pepper
10 ounces white mushrooms, trimmed and quartered
4 6-ounce skin-on striped bass fillets (about 1 inch thick)
2 tablespoons extra-virgin olive oil
3/4 cup dry white wine
3/4 cup heavy cream
Chopped fresh parsley or chives, for garnish (optional)

Steps:

  • Heat the butter in a large skillet over medium heat. Add the shallots and thyme and cook until the shallots are translucent, about 7 minutes; season with salt and pepper. Add the mushrooms and cook, stirring occasionally, until brown and tender, about 8 minutes. Discard the thyme sprigs.
  • Meanwhile, season the fish with salt and pepper. Heat the oil in another large skillet over medium-high heat. Add the fish, skin-side down, and cook until the skin is crisp, 3 to 4 minutes; transfer to a plate. Add the wine to the skillet and scrape up any browned bits with a wooden spoon. 1 3/4 cups arborio rice or medium grain white rice
1 cup dry white wine
1/3 cup shopped parsley
1/3 cup Parmesan cheese

  • Sauce/Boil all ingredients in saucepan until reduced to 2/3 cup or 15 minutes. Season with salt and pepper. Mushroom risotto/Simmer broth in saucepan; keep warm. 10 to 12 oz beef tenderloin cut into strips
4 tablespoons extra virgin olive oil
2 shallots minced
4 tablespoons roasted garlic puree
1 teaspoon sea salt
1 teaspoon freshly ground black pepper
4 tablespoons butter
1 1/2 cups carnaroli or Arborio rice
1 cup sherry or white wine
3 cups mixed wild mushrooms of choice (chanterelles, portabello, shitake, oyster, or porcini)
8 cups hot beef broth (low sodium is best)
1/4 cup demi glace (optional)
1/2 cup parmesan cheese
1/4 cup chopped chives

Steps:

  • Heat a deep sided, stainless steel braising pan or stockpot to make your risotto. Using 2 tablespoons of the olive oil, sear the beef tender pieces until slightly brown but not fully cooked, about 2 minutes. Remove the beef and place on a plate to cool. Add the remaining oil, butter, shallots, and garlic puree to the pan and cook for 3 minutes over medium heat. Add the rice and cook until the rice kernels are translucent, about 3 minutes.
