STOVETOP PEACHES WITH STREUSEL TOPPING AND ZESTY SOUR CREAM

Stovetop Peaches with Streusel Topping and Zesty Sour Cream image

Provided by Alex Guarnaschelli

Categories     dessert

Time 25m

Yield 4 to 6 servings

Number Of Ingredients 13

1 cup sour cream
1 orange, zested and juiced
1 lemon, zested and juiced
8 peaches, washed, dried, 4 of them peeled
1 cup honey
1 tablespoons unsalted butter
1 lime, zested and juiced
1 1/2 cups cooked Streusel Topping, recipe follows
1/2 cup butter, melted
1 cup powdered sugar
1 cup ground almonds
1 cup all-purpose flour
Salt

Steps:

  • In a medium bowl, whisk the sour cream and a few gratings of zest from the orange and the lemon until smooth. Add the juice from half of the orange and half of the lemon. Taste to see if it has a fresh taste from the citrus. If not, add the juice from the remaining fruit halves. Whisk to blend and set aside.
  • With a small paring knife, cut around the center of each peach to halve it and remove the pit. Place the peach halves on a flat surface and cut them into 1/2-inch thick slices.
  • Heat a small saute pan and add the honey. It should start to foam and bubble. Keep the heat low and allow the honey to simmer gently. Note: the honey becomes extremely hot - be careful to keep the heat low.
  • In a large skillet over medium heat, melt the butter. When it begins to froth and turn light brown on the edges, add the peach slices and stir to coat with the butter. Cook, stirring from time to time, until the peaches become tender, 3 to 5 minutes. Add the lime zest and juice. Stir to blend. Meanwhile, check the honey. It should be a golden brown. If the foam prevents you from seeing the color, remove the pot from the heat and blow on the center of the foam to see the color beneath. Pour the honey over the peaches and stir to blend.
  • Remove the skillet from the heat and spoon the peaches into individual serving plates or a platter. Top with the Streusel Topping and a dollop of the sour cream.
  • Preheat oven to 350 degrees F.
  • Mix together until incorporated and in clumps. Place onto a baking sheet and bake for 8 to 10 minutes, or until golden brown. Use as needed.

GRILLED PEACHES

Categories     Summer

Time 10m

Number Of Ingredients 2

2-3 peaches, sliced in two and pitted
2 tablespoons olive (not extra virgin) or vegetable oil, for coating

Steps:

  • Right before cooking, slice the peaches along the seam and pit them. Coat them in oil for cooking, being sure to give them a thick, even coating. I prefer to toss them in a gallon size Ziplock bag along with the oil and gently rub the oil into the peach. This reduces mess, which is critical when you might be in the backyard, far from access to a sink. Don't use extra virgin olive oil, as the smoke point is lower and may cause the peaches to taste burnt and smoky. Grill the peaches skin side up for 5-6 minutes. When they begin to sizzle and shine, turn them over onto their skin and cook for another 6-7 minutes, or until they soften and lose a little bit of their shape. Serve immediately, with or without a garnish of whipped cream or ice cream. If you don't have room to eat all the peaches you've grilled, they can be reheated in the microwave for about 30 seconds, and they still taste great the second time around.

SIMPLEST GRILLED PEACHES

Simplest Grilled Peaches image

Grilled peaches may be summer's greatest joy. Cook them over a medium to low gas grill or a dying charcoal fire, and serve them with ice cream, whipped cream or nothing at all.

Provided by Sam Sifton

Categories     barbecues, dessert

Time 10m

Yield 4 to 6 servings

Number Of Ingredients 2

4 to 6 peaches
Olive oil

Steps:

  • Heat a gas grill to medium. If you are cooking on a charcoal grill, wait until the fire has died down to medium to low heat.
  • Cut the peaches along their seams, all the way around, and twist their halves off their pits. Brush the cut sides of the peaches with olive oil and grill, cut side down, until the fruit has developed grill marks and started to soften, about 4 to 5 minutes.
  • Brush the tops with oil, turn over and move to the side of the grill to continue cooking over indirect heat, another 4 to 5 minutes. You can add flavor by brushing them with maple syrup and bourbon, or molasses and butter. But if they are perfect peaches, they shouldn't need anything at all.

Time 1h20m

Yield 8 servings

Number Of Ingredients 9

1 cup all-purpose flour
1/4 cup light brown muscovado sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon freshly grated nutmeg
11 tablespoons unsalted butter, melted
4 peaches, halved and pitted
Kosher salt
1/2 cup sorghum syrup
Whipped cream or vanilla ice cream, optional

  • Combine the flour, sugar, cinnamon and nutmeg in a small bowl. Add 8 tablespoons of the melted butter and combine until crumbly. Refrigerate for 15 minutes.

Place the peaches in the pan cut-side up and about an inch or so apart. Sprinkle a little bit of salt on the peaches. Top each peach with some of the streusel. Bake in the oven until the peaches are soft and the streusel is lightly golden brown, 45 to 55 minutes, depending on how ripe the peaches are.

ROASTED-PEACH STREUSEL

Categories     Milk/Cream     Dessert     Roast     Kid-Friendly     Quick & Easy     Backyard BBQ     Peach     Almond     Summer     Birthday     Gourmet     Small Plates

Number Of Ingredients 7

5 tablespoons unsalted butter, melted, divided
4 medium peaches (about 1 1/4 pounds), halved and pitted
1/3 cup slivered almonds, toasted and cooled
1/3 cup all-purpose flour
1/3 cup plus 1 tablespoon sugar, divided
1/2 cup heavy cream
3/4 teaspoon pure almond extract

Steps:

  • Preheat oven to 425°F with rack in middle.
  • Drizzle 2 tablespoons butter over bottom of a 9-inch baking dish or pie plate and arrange peach halves cut sides up.
  • Pulse almonds, flour, 1/3 cup sugar, 1/4 teaspoon salt, and remaining 3 tablespoons butter in a food processor until clumps form.
  • Top peaches with streusel and bake until peaches are tender and streusel is browned, about 20 minutes (if browning too quickly, loosely cover with foil).
  • Meanwhile, whip cream with almond extract and remaining tablespoon sugar until it just holds soft peaks.
  • Serve peaches warm with cream.

Tips:

- Choose ripe, firm peaches for grilling. Unripe peaches will not soften properly and overripe peaches may fall apart. - Use a grill brush to clean the grill grates thoroughly before grilling the peaches. This will help to prevent the peaches from sticking. - Brush the peaches with melted butter or olive oil before grilling. This will help to keep them moist and prevent them from burning. - Grill the peaches over medium heat for 5-7 minutes per side, or until they are softened and slightly charred. - Once the peaches are grilled, remove them from the grill and let them cool slightly. Then, slice them in half and remove the pits. - Serve the grilled peaches warm or at room temperature with your favorite toppings, such as streusel topping, ice cream, or yogurt.

Conclusion:

Grilled peaches are a delicious and versatile summer treat. They can be enjoyed on their own or used in a variety of desserts, such as pies, cobblers, and ice cream sundaes. With a little planning and preparation, you can easily grill peaches at home and enjoy their sweet, juicy flavor all season long.
