1 egg
2-3/4 cups milk
3 Tbsp. MINUTE Tapioca
1/3 cup sugar
1 tsp. vanilla
1 cup thawed COOL WHIP Whipped Topping
1 pkg. (10 oz.) frozen strawberries in syrup, thawed, mashed slightly

Steps:

  • Beat egg and milk in medium saucepan with wire whisk until well blended. Add tapioca and sugar; mix well. Let stand 5 min.
  • Bring to full rolling boil on medium heat, stirring constantly. (Pudding will thicken as it cools.) Remove from heat. Stir in vanilla. Pour into medium bowl. Place piece of plastic wrap directly on surface of pudding.
  • Refrigerate 1 hour or until cooled. Gently stir in whipped topping. Layer tapioca mixture alternately with the strawberries in eight parfait glasses. Serve immediately. Or, cover and refrigerate until ready to serve.

2 1/2 cups skim milk
3 tablespoons quick-cooking tapioca
1/4 cup sugar
1 dash salt
1 egg, beaten
1 teaspoon vanilla
1 1/4 cups frozen unsweetened strawberries or 1 1/4 cups fresh sliced strawberries

Steps:

  • In medium saucepan, combine milk, tapioca, sugar, salt and egg; let stand 5 minutes.
  • Over medium heat, bring mixture to a boil, stirring constantly. Remove from heat; stir in vanilla.
  • Let stand 10 minutes to cool and slightly thicken.
  • In parfait glasses, alternate layers of pudding with sliced strawberries, ending with pudding.
  • Refrigerate until serving.

One 1-pound bag frozen unsweetened strawberries, thawed
2 tablespoons sour cream
1 scant cup chilled heavy whipping cream
Eight 2-inch vanilla meringue cookies, coarsely broken (about 2 cups), plus 2 more, halved

Steps:

  • In a medium bowl, using a potato masher or fork, mash the berries and any juices into a chunky sauce.
  • Place the sour cream in a 1-cup measuring cup. Add enough chilled heavy cream to fill the cup completely. Scrape the cream mixture into a deep medium bowl. Beat the mixture until thick and stiff with a handheld electric mixer. Fold in the broken meringues.
  • Divide the sauce in half and spoon into the bottom of four serving bowls or glasses. Divide the cream mixture in half and spoon on top of the sauce. Repeat the layers using the remaining sauce and cream mixture. Top each parfait with a meringue half and serve immediately.

2 tablespoons cornstarch
1/4 cup sugar
1 pinch salt
2 extra large eggs
1 1/2 cups milk
2 teaspoons vanilla extract
4 cups fresh strawberries or 4 cups frozen strawberries
1 cup water
3 tablespoons sugar
2 tablespoons honey
1 pinch salt
3 tablespoons minute tapioca
1/2 small lemons, juice of or 1/2 small lime, juice of

Steps:

  • Mix the starch, sugar and salt in the top of a double boiler, and beat in the eggs. Make sure there are no lumps of cornstarch left.
  • Beat the milk slowly into the egg mixture.
  • Cook, stirring constantly, until thickened.
  • Remove from the heat at once and beat in the vanilla.
  • Divide the custard evenly amongst 6 serving dishes.
  • Mix the strawberries, water, sugar, honey, salt and tapioca in a large pot and bring to a boil. Stir frequently.
  • Simmer until the tapioca is clear, the strawberrries are soft, and the mixture is somewhat thickened.
  • Stir in the lemon or lime juice.
  • Spoon the strawberries evenly over the custard.
  • Chill until set.

2 c strawberries, washed and hulled
1 c sugar
3 c boiling water
1/2 c quick cooking tapioca
1/4 tsp salt
2 tsp butter
1 tsp fresh lemon juice
1/4 tsp almond extract
1/8 tsp red food coloring (optional)
whipped cream and fresh mint leaves, for garnish

Steps:

  • 1. Puree the strawberries in a food processor bowl with 1/2 cup of the sugar or place the berries and sugar in a bowl and use a potato masher to crush; set aside.
  • 2. In a large saucepan, combine the boiling water, tapioca, and salt; allow mixture to stand for 10 minutes. Cook, stirring frequently, over medium heat for 15 minutes or until the tapioca is clear. Stir in the remaining sugar and the butter.
  • 3. Remove the pan from the heat and whisk in the lemon juice, almond extract, and food coloring. Then stir in the strawberries, mixing well.Chill for several hours, then serve in small bowls, garnish with whipped cream and fresh mint leaves.
