Time 40m

Number Of Ingredients 16

½ cup all-purpose flour
1/4 cup packed brown sugar
1/2 teaspoon ground cinnamon
Pinch salt
4 tablespoons cold unsalted butter (cut into 1/2-inch pieces)
3 cups all-purpose flour
1 cup brown sugar (packed)
2 teaspoons baking powder
½ teaspoon baking soda
½ teaspoon ground cinnamon
¼ teaspoon salt
1 cup buttermilk*
1 egg
½ cup canola or vegetable oil
2 teaspoons vanilla extract
2 cups fresh strawberries (hulled and diced (1/2-inch dice or so))

Steps:

  • Preheat the oven to 400 degrees Fahrenheit. Prepare 12 standard-sized muffin cups - either grease the tins or use paper liners.
  • Prepare the topping. In a small bowl, stir together the 1/2 cup flour, 1/4 cup brown sugar, 1/2 teaspoon ground cinnamon, and pinch salt. Using a pastry blender, a couple of butter knives, or your clean hands, cut the butter into the mixture until the topping is the texture of coarse crumbs (butter should be the size of small peas).
  • In a large bowl, combine the flour, brown sugar, baking powder, baking soda, cinnamon, and salt.
  • In a medium bowl, whisk together the buttermilk, egg, oil and vanilla.
  • Stir the wet ingredients into the dry ingredients just until combined. Batter will be thick.
  • Fold in the strawberries.
  • Divide the batter between the muffin cups. Sprinkle topping over the top - it works out to about 1 1/2 tablespoons per muffin.
  • Bake for about 20 minutes until the topping turns golden brown and a toothpick inserted into the center of a muffin comes out clean.
  • Let cool for about five minutes, then remove muffins from the tins and place on a wire rack until cool enough to eat.

Time 35m

Yield Makes 12 muffins

Number Of Ingredients 12

1 1/2 cups sliced strawberries
1/3 cup plus 1 tablespoon sugar
1 1/4 cups all-purpose flour (spooned and leveled)
1/2 cup whole-wheat flour (spooned and leveled)
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1 cup low-fat buttermilk
1/4 cup light olive oil or vegetable oil
1 large egg
1 teaspoon pure vanilla extract

Steps:

  • Preheat oven to 400 degrees. Line a standard 12-cup muffin tin with paper liners. Toss together strawberries and 1/3 cup sugar. Using a potato masher, lightly mash berries; set aside.
  • In a large bowl, whisk together flours, baking powder, baking soda, salt, and cinnamon. In a glass 2-quart measuring cup or a medium bowl, combine buttermilk, oil, egg, and vanilla; whisk to combine.
  • Make a well in the center of the flour mixture and pour in the buttermilk mixture and the berry mixture (with juice). Fold just until combined. Using an ice cream scoop, divide the batter among the muffin cups. Sprinkle the tops with remaining sugar.
  • Bake until a toothpick inserted in the center of a muffin comes out clean, about 17 minutes. Cool 5 minutes in the pan, then transfer muffins to a wire rack to cool completely.

Tips:

  • Choose ripe and juicy strawberries for the best flavor.
  • If you don't have buttermilk, you can make your own by adding 1 tablespoon of lemon juice or vinegar to regular milk and letting it sit for 5 minutes.
  • Don't overmix the batter, as this can result in tough muffins.
  • Fill the muffin cups only 2/3 full, as they will rise during baking.
  • To make the streusel topping, use cold butter and work it into the flour and sugar mixture until it resembles coarse crumbs.
  • Bake the muffins until a toothpick inserted into the center comes out clean, about 20-25 minutes.
  • Let the muffins cool for a few minutes before enjoying.

Conclusion:

Strawberry Sweetheart Streusel Muffins are a delicious and easy-to-make treat that is perfect for any occasion.
