1/4 cup slivered almonds
2 tablespoons sugar
1 package (10 ounces) fresh spinach, torn
1 cup fresh strawberries, sliced
DRESSING:
2 tablespoons canola oil
1 tablespoon raspberry vinegar
1 green onion, finely chopped
1-1/2 teaspoons sugar
1-1/2 teaspoons gluten-free Worcestershire sauce
1 teaspoon poppy seeds
1/4 teaspoon salt
Dash paprika

Steps:

  • In a large skillet, cook and stir almonds and sugar over low heat until sugar is dissolved and almonds are coated. Spread on foil to cool; break apart., In a large salad bowl, combine the spinach, strawberries and almonds. In a jar with a tight-fitting lid, combine the dressing ingredients; shake well. Drizzle over salad; toss gently to coat. Serve immediately.

1/4 c. fresh lemon juice
3 tbsp. honey
1 tbsp. apple cider vinegar
1 tbsp. poppy seeds
2 tsp. dijon mustard
1/2 tsp. salt
1/4 tsp. ground black pepper
2 5-oz. containers baby spinach
1 lb. strawberries, halved or sliced
2 oranges, peeled and sliced
1 1/2 c. chopped pecans, toasted
4 oz. goat cheese, crumbled

Steps:

  • For the dressing: In a small jar, combine the olive oil, lemon juice, honey, vinegar, poppy seeds, mustard, salt, and pepper. Seal the jar; shake vigorously to combine. Set aside.

1 (6 ounce) bag Baby Spinach
1 (10 ounce) bag italian blend salad greens
2 cups strawberries, sliced
1 1/2 cups blood oranges, segmented and chopped
1/2 cup dried cranberries
1/2 cup chopped pecans
3 tablespoons brown sugar
1/4 cup seedless raspberry preserves
1/3 cup balsamic vinegar
2 tablespoons fresh squeezed key lime juice
1/4 cup sugar
2 teaspoons poppy seeds

Steps:

  • To make the vinegarette drssing: Put raspberry preserves in a small bowl and cook in microwave at 50% power for 45 seconds or until preserves has liquified. Thoroughly mix all dressing ingredients in bowl with wire whisk. Set aside.
  • Put the spinach, salad greens, strawberries, blood oranges and cranberries in a large bowl and toss until ingredients are well blended. Mix the chopped pecans with the brown sugar. Sprinkle over the salad.
  • Whisk vinegarette again until well mixed. Drizzle the vinegarette over the salad. Use the quantity of vinegarette to your liking. Toss everything together until salad is evenly coated with the vinegarette dressing.
