2 tablespoons sour cream
1 teaspoon pure vanilla extract
2 1/2 cups all-purpose flour, plus more for dusting (see Cook's Note)
1/3 cup granulated sugar, plus more for sprinkling
1 tablespoon baking powder
1/2 teaspoon kosher salt
1 stick (8 tablespoons) unsalted butter, cut into 1-inch cubes and frozen
1 pound strawberries, hulled and sliced
1/4 cup packed light brown sugar
1 cup heavy cream
2 tablespoons sour cream
1 teaspoon pure vanilla extract

Steps:

  • For the shortcakes: Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper.
  • Whisk the heavy cream, sour cream and vanilla in a small bowl; refrigerate until ready to use. Pulse the flour, granulated sugar, baking powder and salt in a food processor until combined. 2 sticks plus 2 tablespoons cold unsalted butter, cut into small pieces
2 large eggs, lightly beaten
1/2 teaspoon pure vanilla extract
4 1/2 cups sliced strawberries (1 pound 4 ounces)
3 tablespoons confectioners' sugar

Steps:

  • Bring 1 1/2 cups cream to a gentle simmer in a small saucepan over medium heat. Bruise large basil leaves by hitting repeatedly with the dull side of a knife, and stir into cream. 4 cups (1 pound or 455 g) strawberries, green tops cut off
2 tablespoons granulated sugar
1 tablespoon chopped fresh basil
1 teaspoon balsamic vinegar

½ vanilla bean or 2 teaspoons vanilla extract
1 cup cold heavy cream
1 tablespoon granulated sugar
Basil-Cornmeal Shortcakes
1¼ cups (175 g) all-purpose flour
⅓ cup (50 g) yellow cornmeal
4 tablespoons (50 g) granulated sugar, divided
1 ½ teaspoons baking powder
1 teaspoon baking soda
