1 teaspoon fresh lemon juice
1/2 cup plus 1 tablespoon granulated sugar
2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon coarse salt

Cut in the butter with a pastry cutter, or rub in with your fingers, until mixture resembles coarse crumbs. Stir in cream until dough starts to come together, then stir in strawberry mixture.
  • Using a 1 1/2-inch ice cream scoop or a tablespoon, drop dough onto baking sheets lined with parchment, spacing evenly apart. Sprinkle with sanding sugar, and bake until golden brown, 24 to 25 minutes. Transfer to a wire rack, and let cool. Tips:

  • Soften the butter and cream cheese to room temperature before mixing to ensure a smooth and creamy batter.
  • Use fresh strawberries for the best flavor. If using frozen strawberries, thaw them completely and drain off any excess moisture before using.
  • Do not overmix the batter, as this can result in tough cookies. Mix just until the ingredients are combined.
  • Chill the cookie dough for at least 30 minutes before baking. This will help the cookies hold their shape in the oven.
  • Bake the cookies until the edges are just beginning to brown. Overbaking will result in dry, crumbly cookies.
  • Let the cookies cool completely before serving. This will allow the flavors to meld and the cookies to set.

Conclusion:

Strawberry shortcake cookies are a delicious and easy-to-make treat that is perfect for any occasion. With their soft and chewy texture, sweet strawberry flavor, and creamy frosting, these cookies are sure to be a hit with everyone. Whether you are baking them for a special event or just for a weekend treat, strawberry shortcake cookies are sure to please.
