5 large Red Delicious apples, peeled and finely chopped
4 cups finely chopped fresh or thawed frozen rhubarb (about 8 stalks)
4 cups fresh strawberries, hulled and halved
1/2 cup sugar
1/4 cup water
1 teaspoon vanilla extract

Steps:

  • In a Dutch oven, combine apples, rhubarb, strawberries, sugar and water; bring to a boil. Reduce heat; simmer, covered, 18-22 minutes or until fruit is tender, stirring occasionally., Remove from heat; stir in vanilla. If a smoother consistency is desired, cool slightly and, in batches, process in a blender. Serve warm or cold. Freeze option: Freeze cooled applesauce in freezer containers. 2 pounds tart apples, peeled and cut into 1/2-inch chunks

5 apples (recommended: Cortland or McIntosh) 1 cinnamon stick
1/2 cup water
8 to 10 strawberries, stemmed and chopped
1/4 to 1/2 cup sugar

Steps:

  • Peel and core apples then cut into small chunks. In a large saucepan, bring apples, cinnamon stick, and water to a boil and simmer until apples are tender when poked with a fork, about 15 minutes. Add strawberries and cook 5 minutes more. Remove from heat. Press the mixture through a sieve over a bowl. Taste, and if sugar is needed, add now while the mixture is still warm. Refrigerate until ready to serve.

1 cup chopped rhubarb
1/2 cup sliced strawberry
1/4 cup white sugar
2 teaspoons freshly grated orange rind
1/3 cup orange juice (preferably freshly squeezed)

Steps:

  • Apple peel adds colour and fibre to this dish, so I recommend you don't peel the apples; however, you can certainly do so if you wish.
  • Core apples and chop into chunks; place in a saucepan along with 1 tbsp cold water.

  • Add remaining ingredients and turn heat up; bring to a boil.
