STRAWBERRY PIZZA
Steps:
- Frangipane:
- In the bowl of an electric mixer, beat the butter and sugar together until light and fluffy, scraping down the bowl as necessary. Add the egg yolks, beat in well, and add the almond extract. Remove the beater and stir in the ground almonds and flour until evenly blended. the mixture should be the consistency of a thick paste.
- Pizzas:
- Preheat the oven to 400 degrees. On a lightly floured surface, roll out the pastry to a 1/8-inch thickness and, using a plate or cardboard circle as a template, use a very sharp knife to cut four 7-inch circles. Spread a circle of frangipane (they should be touching each other so that you can fit as many as possible onto the circle of frangipane). Beat the egg yolk lightly with a fork and brush the border of the pastry with it (try not to let any yolk dribble down onto the cut edges of the pastry, otherwise it will not rise as high). Bake the tarts for about 20 minutes, until the edges are golden and the pastry is baked through. Remove from the oven and allow to cool for 5 minutes. Place a sprig of mint in the center of each tart and sprinkle it lightly with confectioners' sugar. Serve while still warm, accompanied by a scoop of vanilla ice cream
STRAWBERRY DESSERT PIZZA
A delightful addition to that Friday night family pizza. Found this at Guide to Southern Food. If using fresh strawberries, mash, sprinkle with sugar, cover, refrigerate for 2 hours, and add 1/4 cup water when cooking. Every year when the strawberries started to come in, my mom would make this cool, refreshing dessert. I've seen it made with canned cherries or pie filling as well. Mom always made her own sugar cookie base, but I've found that the prepared sugar cookie dough works just as well.

V'S STRAWBERRY PIZZA (THICK CRUST)
My family loves when I make Strawberry Pizza and can hardly wait until Strawberries are in season. The most raved about part has always been the crust. So I decided to experiment and make a thicker crust pizza. This turned out to be awesome. If you enjoy this type of dessert, you gotta try my new way to make the crust thick! New family favorite. Mmmmm ;) Note: You can save time by buying prepared sugar cookie dough sheets )pkg of 3 or 1 1/2 pkg sugar cookie squares) and place them on a cookie sheet, cook for 7 minutes (Very Important not to cook any longer). Let completely cool before assembling. Pretty much how I do it most of the time ;)
