1/2 teaspoon salt, divided
1 cup water
1 teaspoon lemon juice
2 teaspoons baking powder
5 tablespoons butter, divided
3/4 cup 2% milk
5 cups sliced peeled apples
1/2 teaspoon plus 1/8 teaspoon ground cinnamon, divided
1/2 teaspoon ground nutmeg
1 teaspoon vanilla extract
1 tablespoon coarse sugar
Whipped cream, optional

Steps:

  • In a saucepan, combine brown sugar, 1/4 cup flour and 1/4 teaspoon salt. Add water and lemon juice; cook and stir over medium heat until thick. 2 pears such as Anjou, peeled and sliced 1/2-inch thick
4 nectarines or peaches, pitted and sliced 1/2-inch thick
2 plums, pitted and sliced 1/2-inch thick
1 cup strawberries, rinsed and patted dry, hulled and quartered
1/2 cup blackberries, rinsed and patted dry
2 teaspoons fresh lemon juice
2 teaspoons cornstarch
1/2 cup plus 1 tablespoon sugar or maple syrup
1/4 teaspoon ground cloves
1/8 teaspoon ground nutmeg
Pinch salt
1 1/2 tablespoons unsalted butter

10 tablespoons butter

1/3 cup brown sugar
1/3 cup sugar
1/4 cup tapioca pearls
1 teaspoon zest and juice from one small lemon
1 egg (separated)
2 tablespoons turbinado sugar
1/2 cup heavy cream
2 teaspoons vanilla

Steps:

  • Make the dough like pie crust (cut butter into dry, add wet to bring together). Chill for at least 1 hour.
