Tips:

  • For the pancake batter, use all-purpose flour for a light and fluffy texture. You can also substitute gluten-free flour or whole wheat flour for a healthier option.
  • Make sure the pancake batter is not too thick or too thin. The consistency should be like heavy cream.
  • Heat a lightly oiled pan or griddle over medium-low heat. Pour 1/4 cup of batter onto the hot surface for each pancake.
  • Cook the pancakes for 2-3 minutes per side, or until golden brown.
  • To make the strawberry syrup, simply combine strawberries, sugar, and lemon juice in a saucepan and bring to a simmer. Reduce heat and let simmer for 15 minutes, or until the syrup has thickened.
  • To assemble the skewers, simply thread a pancake, a strawberry, and a blueberry onto a skewer. Repeat until all of the ingredients are used up.
  • Serve the skewers immediately with strawberry syrup and whipped cream, if desired.
