STRAWBERRY OATMEAL BREAKFAST BARS
I'm always on the lookout for easy and delicious things to make for breakfast that are on the one hand, relatively healthy and good for you, while on the other hand, not too good for you. I think these really do fit the bill. These are normally made with strawberry preserves, but here we're using fresh strawberries for a little lighter and lower-sugar approach. For best results, refrigerate before serving.

- Preheat the oven to 375 degrees F (190 degrees C). Butter a 9x12-inch baking dish.

- Combine diced strawberries, lemon juice, sugar, and cornstarch in a mixing bowl and stir until thoroughly combined and the cornstarch disappears. Set aside until needed.
- Combine oats, all-purpose flour, whole wheat flour, brown sugar, salt, and ginger in a mixing bowl. Pour in melted butter and stir thoroughly until dry ingredients are evenly coated.
- Transfer 60% of the oatmeal mixture into the prepared baking dish and spread out into an even layer. Press the mixture down with the back of a spoon or spatula to compress slightly.
- Place strawberries over the top using a slotted spoon. Do not press down. Reserve any accumulated juices in the bowl. Top with remaining oatmeal mixture and press down lightly with the back of a spoon or spatula. Drizzle reserved juices on top.

STRAWBERRY-ORANGE OATMEAL BARS
A strawberry-orange filling, combined with a coconut-almond-oatmeal crust, makes for fruity and flavorful bar! Adjust the amount of maple syrup used in the filling according to the sweetness of your strawberries--and feel free to use brown sugar instead of maple syrup, if you prefer.

This is a fast recipe using basic ingredients. The beauty of this recipe is how customizable it is. A favorite of mine is using peaches, pecans, white chocolate, and 1/4 teaspoon cinnamon.

Steps:
- Preheat oven to 375°F.
- In a large bowl, mix everything together but the jam.
- Measure out 2 cups of this mixture. Leave the rest in the bowl and set aside.
- Take the 2 cups of the mixture and press it into the bottom of an 8 inches square pan, coated with cooking spray. Using a large spoon, distribute jam on top of the mixture in the pan. Spread it evenly all over. (I used the squeeze-bottle spread for this and it made this part of the process a lot quicker).

- Bake 25 minutes.
- Remove the pan from the oven and allow to cool for at least 15 minutes before cutting into bars.
STRAWBERRY FILLED OATMEAL BARS
I created this recipe one day after coming home from a long vacation and realizing that I didn't have any eggs with which to bake. I knew I had butter, sugar and old-fashioned oats on hand, so I started brainstorming on what I could create with those simple ingredients. After playing around with my one of my grandmother's old...

Steps:
- 1. Preheat oven to 350 degrees.
- 2. Using cooking spray, grease one 9x9 inch pan. (You could also line with greased parchment paper.)
- 3. In a mixer combine all ingredients except butter and strawberry jam until well combined.
- 4. Mix in softened butter until you have a nice crumbly mixture.
- 5. Press about 2/3 of the mixture (about 1 1/2 to 2 cups) into the bottom of the baking dish.
- 6. Heat jam in the microwave (in a microwave safe dish) for about 20 seconds, then stir. This will make step seven MUCH easier.
- 7. Spread the strawberry jam evenly over the top, allowing room for a small border of oats at the edge. (about 1/4 to 1/2 inch)
- 8. Sprinkle the remaining oat mixture over the top.
- 9. Bake for 35 to 40 minutes in preheated oven, or until lightly browned. Allow to cool before cutting into bars.
Tips:
- Fresh strawberries: For the best flavor, use fresh, ripe strawberries. If you don't have fresh strawberries, you can substitute frozen strawberries that have been thawed and drained.
- Old-fashioned rolled oats: This recipe calls for old-fashioned rolled oats, which are heartier and have more texture than quick-cooking oats. If you only have quick-cooking oats, you can use them, but your bars may be a little softer.
- Brown sugar: Brown sugar adds a delicious molasses flavor to the bars. If you don't have brown sugar, you can substitute granulated sugar, but your bars will be a little less flavorful.
- Butter: Use unsalted butter so that you can control the amount of salt in the bars. If you only have salted butter, omit the additional salt called for in the recipe.
- Vanilla extract: Vanilla extract adds a warm, rich flavor to the bars. If you don't have vanilla extract, you can substitute almond extract or another flavoring of your choice.
- Baking powder: Baking powder helps the bars to rise and become light and fluffy. If you don't have baking powder, you can omit it, but your bars may be a little denser.
- Salt: Salt helps to balance the sweetness of the bars. If you don't have salt, you can omit it, but your bars may be a little bland.
Conclusion:
These strawberry oatmeal bars are a delicious and easy-to-make snack or breakfast treat. They are perfect for on-the-go mornings or for packing in lunches. The bars are also a great way to use up fresh strawberries when they are in season. With their sweet and tangy strawberry filling and their hearty oat crust, these bars are sure to be a hit with everyone who tries them.
