STRAWBERRY CREAM PIE (SUGAR FREE)
This is an alternative to my sugar free Key Lime Pie. I exchanged the lime jello, for strawberry, and the lime juice with strawberry flavoring. I think it turned out well.

- 1. microwave water on high for 45 secs up to 1 1/2 mins. until boiling. Whisk in gelatin until dissolved.
- 2. In a large bowl mix gelatin mixture and cream cheese until blended well. Add strawberry flavoring to this also.
- 3. Fold in Cool Whip, spread in crust and refrigerate until set. About 1 hour. Garnish with strawberries and Cool Whip.
NO CRUST STRAWBERRY PIE
This is a low calorie, no crust strawberry pie. It is made with sugar-free strawberry flavored gelatin and sugar-free vanilla pudding. It is very good! I've had the recipe for years, and to be honest, I don't remember where I got it. Garnish with light whipped topping if you like.

- In a bowl, beat egg whites and cream of tartar on medium speed until soft peaks form. gradually beat in sugar, 1 tablespoon at a time, on high until stiff glossy peaks form and sugar is dissolved. This is a recipe from Joyce Gaddie - she won 1st place in the Pillsbury Refrigerated Pie Crust Pie Baking Competition in Sept. '09 at the Tennessee Valley Fair. - Place one crust into a pie dish. Take the second pie crust and use a cookie cutter to make cut-outs for the top of the finished pie. (Ms. Gaddie used star shapes.) Sprinkle the cut-outs with sparkling sugar (colored sugar available with cake decorating supplies). Bake the pie crust in the dish and the cut-outs according to package directions.
- Slice the strawberries and fold in a mixing bowl with the strawberry glaze. (It looked like her berries were halved.).
- In another large mixing bowl, whip the cream cheese with an electric mixer, until light and fluffy. Stir in the marshmallow creme.
- Put 1/3 of the cream cheese mixture in the bottom of the baked, cooled pie crust. Reserve 1 cup of the glazed strawberries for topping the pie. Spread the remaining strawberries on top of the cream cheese layer. Follow with the rest of the cream cheese mixture. Put the reserved cup of strawberries in the middle, and place the baked cut-outs around the strawberries on the top of the pie.
- Store in the refrigerator.

- Preheat oven to 450°. Unroll crust into a 9-in. pie plate. Trim edge. Line unpricked crust with a double thickness of heavy-duty foil or parchment. Bake 8 minutes. - In a small saucepan mix water and cornstarch with a wire whisk.
- Bring to a boil, stirring constantly, for 1 minute.
- Remove from heat, cool slightly.
