STRAWBERRY CREAM PIE (SUGAR FREE)

This is an alternative to my sugar free Key Lime Pie. I exchanged the lime jello, for strawberry, and the lime juice with strawberry flavoring. I think it turned out well.

1/4 c water
1 pkg sugar free strawberry jello 4.5oz
8 oz cream cheese (softened)
1 tsp strawberry flavoring
8 oz frozen sugar free, or lite whipped topping, i used cool whip. thawed
1 graham cracker pie crust

Steps:

  • 1. microwave water on high for 45 secs up to 1 1/2 mins. until boiling. Whisk in gelatin until dissolved.
  • 2. In a large bowl mix gelatin mixture and cream cheese until blended well. Add strawberry flavoring to this also.
  • 3. Fold in Cool Whip, spread in crust and refrigerate until set. About 1 hour. Garnish with strawberries and Cool Whip.

NO CRUST STRAWBERRY PIE

This is a low calorie, no crust strawberry pie. It is made with sugar-free strawberry flavored gelatin and sugar-free vanilla pudding. It is very good! I've had the recipe for years, and to be honest, I don't remember where I got it. Garnish with light whipped topping if you like.

1 (2.1 ounce) package sugar-free cook and serve vanilla pudding mix
1 (.6 ounce) package sugar-free strawberry flavored Jell-O®
2 cups water

Steps:

  • Rinse and hull strawberries. Distribute evenly in a 10 inch pie pan.
  • In a medium saucepan combine pudding mix, gelatin mix, and water. Stir well and bring to a full boil. Pour mixture over strawberries and refrigerate for 4 to 6 hours. Top with light frozen whipped topping prior to serving, if desired.

My husband and I are grain and dairy farmers...and big fans of strawberries. The fruit I pick often ends up in this pie. The combination of the cool creamy berry filling and the delightfully different meringue crust guarantees you'll hear, "Pass the pie, please", all around the table.

3 large egg whites
1/4 teaspoon cream of tartar
1 cup sugar
1/2 cup crushed saltines (about 12 crackers)
1/2 cup chopped pecans
1 teaspoon vanilla extract
2 pints fresh strawberries, divided
4 cups miniature marshmallows
1 carton (8 ounces) frozen whipped topping, thawed
Red food coloring, optional

Steps:

  • In a bowl, beat egg whites and cream of tartar on medium speed until soft peaks form. gradually beat in sugar, 1 tablespoon at a time, on high until stiff glossy peaks form and sugar is dissolved. Fold in the crackers, pecans and vanilla., Spread onto the bottom and up the sides of a greased 10-in. deep-dish pie plate. Bake at 350° for 25-30 minutes or until meringue is lightly browned. Cool on a wire rack., Set aside one strawberry for garnish. Slice half of the strawberries; set aside. In a bowl, mash the remaining strawberries; drain juice, reserving 1/2 cup. In a saucepan, combine marshmallows and reserved juice. Cook and stir over low heat until marshmallows are melted. Refrigerate until partially set., Fold the sliced and mashed strawberries and whipped topping into marshmallow mixture. Add food coloring if desired. Spoon into meringue shell. Garnish with the reserved strawberry. Refrigerate for 3 hours or until set. Refrigerate leftovers.

This is a recipe from Joyce Gaddie - she won 1st place in the Pillsbury Refrigerated Pie Crust Pie Baking Competition in Sept. '09 at the Tennessee Valley Fair. She and the recipe were featured on a local noon news program, and the pie looks divine! I'm posting here for safe-keeping, until next strawberry season rolls around. I will update from "package directions" when I make it.

1 (15 ounce) box refrigerated pie crusts, softened according to box directions
1 quart strawberry, washed and stems removed
12 ounces strawberry glaze
16 ounces cream cheese, softened
13 ounces marshmallow creme
decorator sugar (optional)

Steps:

  • Place one crust into a pie dish. Take the second pie crust and use a cookie cutter to make cut-outs for the top of the finished pie. (Ms. Gaddie used star shapes.) Sprinkle the cut-outs with sparkling sugar (colored sugar available with cake decorating supplies). Bake the pie crust in the dish and the cut-outs according to package directions.
  • Slice the strawberries and fold in a mixing bowl with the strawberry glaze. (It looked like her berries were halved.).
  • In another large mixing bowl, whip the cream cheese with an electric mixer, until light and fluffy. Stir in the marshmallow creme.
  • Put 1/3 of the cream cheese mixture in the bottom of the baked, cooled pie crust. Reserve 1 cup of the glazed strawberries for topping the pie. Spread the remaining strawberries on top of the cream cheese layer. Follow with the rest of the cream cheese mixture. Put the reserved cup of strawberries in the middle, and place the baked cut-outs around the strawberries on the top of the pie.
  • Store in the refrigerator.

2 tablespoons cornstarch
1 cup water
1 package (3 ounces) strawberry gelatin
4 cups sliced fresh strawberries

  • Preheat oven to 450°. Unroll crust into a 9-in. pie plate. Trim edge. Line unpricked crust with a double thickness of heavy-duty foil or parchment. Bake 8 minutes. Remove foil; bake 5 minutes longer. Cool on a wire rack., In a small saucepan, combine the sugar, cornstarch and water until smooth. Bring to a boil; cook and stir until thickened, about 2 minutes. 1 baked 9 inch pie shell
1 1/2 cups water
2 tablespoons cornstarch
1 package sugar-free strawberry gelatin
6 tablespoons Splenda sugar substitute or 4 packets Equal sugar substitute (I prefer to use Splenda)
3 cups sliced strawberries
1 (8 ounce) container Cool Whip or 1 package dream whipped topping (Kraft)

Steps:

  • In a small saucepan mix water and cornstarch with a wire whisk.
  • Bring to a boil, stirring constantly, for 1 minute.
  • Remove from heat, cool slightly.
  • Stir in gelatin and sweetener.
  • Mix well, and gently stir in strawbrries.
  • Pour into baked pie shell and refrigerate for about 2 hours.
  • Top with Cool Whip OR Dream Whip right before serving.
  • Garnish with strawberies if desired.

Tips:

  • If you don't have a sugar-free sweetener on hand, you can use regular sugar. Just be sure to reduce the amount by half, as sugar-free sweeteners are much sweeter than regular sugar.
  • For a vegan version of this pie, use agar-agar powder instead of gelatin. Agar-agar is a plant-based gelling agent that is just as effective as gelatin.
  • To make the pie even more decadent, top it with whipped cream or ice cream.
  • This pie is best served chilled. So, be sure to refrigerate it for at least 4 hours before serving.
