1 pound skinless, boneless chicken breast halves
2 tablespoons avocado oil
2 tablespoons white wine vinegar
2 teaspoons garlic and herb seasoning blend (such as Mrs. Dash®)
¼ teaspoon salt
½ cup fresh strawberries, stemmed
3 tablespoons white wine vinegar
2 tablespoons avocado oil
1 teaspoon honey
½ teaspoon Dijon mustard
½ teaspoon poppy seeds
¼ teaspoon salt
8 cups arugula
1 cup diced mango
1 cup sliced fresh strawberries
1 large avocado, pitted and sliced
½ cup red onion, thinly sliced
¼ cup pine nuts
¼ cup crumbled feta cheese

Steps:

  • Pound chicken breast to an even 1-inch thickness using a meat mallet or a rolling pin; place in a resealable plastic bag.
  • Whisk oil, vinegar, garlic-herb seasoning, and salt together in a small bowl. Pour over chicken and marinate in the refrigerator for at least 2 hours.
  • Combine strawberries, vinegar, oil, honey, Dijon mustard, poppy seeds, and salt in a blender. Blend on high speed until smooth, 15 to 20 seconds. Refrigerate until ready to use.
  • Preheat an outdoor grill for medium-high heat and lightly oil the grate.
  • Remove chicken from marinade. Place chicken on the hot grill; discard leftover marinade.
  • Close the grill lid and lower the heat to medium. Grill until chicken is no longer pink in the center and juices run clear, 10 to 12 minutes, turning halfway through. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Transfer to a plate to rest and cool for 10 minutes. Slice chicken on the diagonal.
  • Place arugula on a large platter. Top with sliced chicken, mango, strawberries, avocado, red onion, pine nuts, and feta cheese. Drizzle with dressing and serve.

3-5 medium jalapeño peppers (your choice)
1 mango, firm
12 large strawberries, fresh
6 1/2 c sugar
1 1/2 c apple cider vinegar
1 pkg sure jell (dry)

Steps:

  • 1. Put mango, peppers, strawberries and vinegar in a blender and blend well. Pour into a large casserole type sauce pan. Add the sugar and sure jell. Cook 10 minutes after it comes to a boil.
  • 2. Have prepared jelly jars hot and ready. Also have boiling water ready for a boiling water bath.
  • 3. Take jelly off the stove and skim off foam. Let cool 2 minutes and put into jelly jars and seal. put the jars in the boiling water bath and after it comes to a boil time it for 15 minutes and take out. Causion very hot. Use canning tongs. Set a side to cool. check seals after they are completely cool.

2 mangos - peeled, seeded, and cubed
¼ cup apple juice
15 fresh strawberries, hulled and halved
½ cup white sugar
3 tablespoons honey
½ cup cold butter
¼ cup packed brown sugar
1 cup all-purpose flour
1 tablespoon ground nutmeg
1 tablespoon ground cinnamon
1 (9 inch) refrigerated pie crust

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Place a mixing bowl in the refrigerator to chill.
  • Place the mangos and apple juice in a sauce pan; simmer over medium-low heat. After 10 minutes, stir 1/4 cup white sugar and the honey into the mangos. Add the strawberries. Reduce heat to low and continue to simmer until fruit softens.
  • Place the butter into the chilled mixing bowl, and cut into small pieces. Combine butter with the remaining 1/4 cup white sugar, brown sugar, flour, nutmeg, and cinnamon. Use your fingers or two forks to mix the butter into the dry ingredients until the mixture becomes coarse textured and crumbly. Refrigerate until needed.
  • Pour the mango mixture into the prepared pie crust. Spread the crumb mixture evenly over the top of the fruit.
  • Bake in preheated oven until topping is golden brown, about 20 minutes. Remove from oven and cool at least 30 minutes before serving.

1 medium red onion, diced
1 anahiem pepper, diced

3 Tbsp honey
1/4 c fresh chopped cilantro, or more if you like
3 Tbsp lime juice
1 tsp olive oil, optional, adds a nice shine to the salsa

1 lb package fresh strawberries
4 oz dried mango (sliced thin)
2 oz dried pineapple (sliced thin)
6 1/2 c sugar
1 1/2 c apple cider vinegar
1 pkg (dry) sure jel
2-4 jalapeno peppers (seeds removed use gloves)

Steps:

  • 1. Wash and boil your jars and lids for the jar. Get boiling water bath ready for jars and begin your mixing of ingredients
  • 2. Put strawberries, mango, pineapple, jalapeño peppers, and apple cider vinegar in a blender and blend until all are liquid about 1 minute.
  • 3. Place the sugar and sure jel in a large pot and mix together then add processed fruit mix and bring to a boil and boil gently for 10 minutes.
  • 4. Put into jars process the lids and place into a boiling water bath for 15 minutes. Take out and allow to sit until caps seal. If one doesn't simply rewarm and do again. USES: Great for any salad as a dressing, over chicken in a slow cooker, as a dipping sauce for anything Chinese like egg rolls or wontons. Great over cream cheese as an appetizer and served with crackers.
