STRAWBERRY HAND PIES

Strawberry Hand Pies image

Easy to make when you use pre-made crust, but fill them with your homemade pie filling for that classic strawberry pie flavor.

Categories     Mini Pies

Time 40m

Yield 6

Number Of Ingredients 7

1 ½ cups diced fresh strawberries
1 tablespoon sugar
2 teaspoons cornstarch
½ teaspoon vanilla extract
1 (14.1 ounce) package pastry for a 9 inch double crust pie
1 large egg, beaten
1 teaspoon confectioners' sugar

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper.
  • Combine strawberries, sugar, cornstarch, and vanilla extract in a bowl; set aside and let the strawberries macerate.
  • Lay the 2 pie crusts on a large floured work surface. Roll the crusts out to about 12 inches, and using a knife or pizza cutter, cut 4 sides of the circles to form 2 squares. Cut each square into three equal rectangles so you have a total of 6 rectangles. Using a slotted spoon, place 2 tablespoons of the strawberry mixture on one half of the long ends of the rectangle, but don't spread all the way to the edge.
  • Brush beaten egg around the sides of the strips, and then fold the dry end over the strawberry mixture end. Using a fork, gently press the edges together to seal really well, and cut a couple slits in the top of each pie to allow steam to escape.
  • Brush the tops of the hand pies with the remaining egg and set hand pies onto the prepared baking sheet.
  • Bake in the preheated oven until golden brown, 13 to 15 minutes. Remove the pies to a wire rack to cool and dust with confectioners' sugar, if using. Serve warm or at room temperature.

Tips:

  • Use fresh, ripe strawberries: Fresh strawberries have the best flavor and will yield the most vibrant jam. If you can't find fresh strawberries, you can use frozen strawberries, but be sure to thaw them completely before using.
  • Don't overcook the jam: Overcooked jam will be thick and sticky, and it will lose its bright red color. Cook the jam until it has thickened slightly and coats the back of a spoon, about 20-25 minutes.
  • Let the jam cool completely before filling the hand pies: This will help to prevent the jam from leaking out of the pies.
  • Use a biscuit cutter to cut out the hand pies: This will ensure that the pies are all the same size and shape.
  • Be sure to seal the edges of the hand pies well: This will prevent the jam from leaking out during baking.
  • Bake the hand pies until they are golden brown: This will take about 20-25 minutes.

Conclusion:

Strawberry jam hand pies are a delicious and easy-to-make treat that are perfect for any occasion. They're made with fresh strawberries, sugar, lemon juice, and a touch of cinnamon. The hand pies are then baked until they're golden brown and flaky. Serve them warm with a scoop of vanilla ice cream or whipped cream for a truly indulgent dessert.
