Glazed Strawberry Jam-Filled Coffee Cake image

Sneak a layer of strawberry jam into the sour cream coffee cake, sprinkle on the crumb topping and drizzle with an easy glaze.

Provided by Food Network Kitchen

Time 1h50m

Yield 8

Number Of Ingredients 17

3/4 cup all-purpose flour
2/3 cup packed light brown sugar
1 teaspoon ground cinnamon
Pinch of fine salt
5 tablespoons unsalted butter, at room temperature
1 stick (8 tablespoons) unsalted butter, at room temperature, plus more, for the pan
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon fine salt
1 cup granulated sugar
2 large eggs
2 teaspoons vanilla extract
1 cup sour cream
2/3 cup strawberry jam
3/4 cup confectioners' sugar
2 tablespoons milk

Steps:

  • Put the flour, brown sugar, cinnamon and salt in a small bowl and stir to combine. Add the butter and mix thoroughly with your fingers or a fork until all of the butter has been evenly distributed and incorporated into the flour. Form into small to medium clumps with your fingers.
  • Preheat the oven to 350 degrees F. Butter an 8-inch square cake pan.
  • Whisk together the flour, baking powder, baking soda and salt in a small bowl.
  • Beat together the butter and granulated sugar in a large bowl with an electric mixer on medium-high speed until light and fluffy, about 3 minutes. Add the eggs 1 at a time, beating well after each addition. Beat in the vanilla. Reduce the speed to low and add the flour mixture in 3 batches, alternating with the sour cream, beginning and ending with the flour, beating until just incorporated.
  • Spoon half of the cake batter (it will be very thick) into the prepared pan and smooth with an offset spatula. Dollop the strawberry jam on top and carefully smooth with the spatula. Spoon the remaining cake batter on top and smooth the top. Sprinkle on the crumb topping.
  • Bake until the cake and topping are golden brown and a toothpick inserted into the center of the cake comes out clean, about 1 hour. Let cool in the pan 20 minutes, then invert onto a plate; invert back onto a rack to cool completely.
  • When the cake is cool, whisk together the confectioners' sugar and milk in a medium bowl until smooth. Drizzle the glaze over the cake and let set.

STRAWBERRY JAM

This is by far the easiest recipe I have found for strawberry jam without using a pectin. The jam is soft, spreadable and delicious.

Time 40m

Yield 40

Number Of Ingredients 3

2 pounds fresh strawberries, hulled
4 cups white sugar
¼ cup lemon juice

Steps:

  • In a wide bowl, crush strawberries in batches until you have 4 cups of mashed berry. In a heavy bottomed saucepan, mix together the strawberries, sugar, and lemon juice. Stir over low heat until the sugar is dissolved. Increase heat to high, and bring the mixture to a full rolling boil. Boil, stirring often, until the mixture reaches 220 degrees F (105 degrees C). Transfer to hot sterile jars, leaving 1/4 to 1/2 inch headspace, and seal. Process in a water bath. If the jam is going to be eaten right away, don't bother with processing, and just refrigerate.

Tips:

  • Selecting Fresh Strawberries: Choose plump, bright red strawberries with no signs of bruising or mold. Fresh strawberries will contribute to the best flavor and texture of the glaze.
  • Preparing Strawberries: Before cooking, remove the strawberry hulls and slice them into small pieces. This will help them break down and release their natural juices during the cooking process.
  • Balancing Sweetness and Tartness: Adjust the amount of sugar and lemon juice based on your personal preference. If you prefer a sweeter glaze, add more sugar. If you prefer a tangier glaze, add more lemon juice.
  • Cooking Time: Cook the glaze over medium heat, stirring frequently, until it reaches a thick and syrupy consistency. Be patient and allow the glaze to simmer for at least 20 minutes to develop its full flavor.
  • Storing and Using the Glaze: Once the glaze is ready, let it cool completely before storing it in an airtight container in the refrigerator. The glaze can be kept for up to two weeks. Use the glaze to top pancakes, waffles, French toast, ice cream, or other desserts.

Conclusion:

Homemade strawberry jam glaze is an easy-to-make and versatile ingredient that can elevate the flavor of various desserts. With its vibrant red color and sweet-tart flavor, it adds a touch of elegance and deliciousness to your culinary creations. Whether you use it as a topping for pancakes, waffles, or ice cream, or as a filling for pastries, strawberry jam glaze is sure to impress your family and friends. So, next time you have a craving for something sweet, try making this delicious glaze and enjoy the burst of strawberry flavor in every bite.
