1 angel food cake
1 (16 ounce) container Cool Whip
8 ounces cream cheese
1 cup sugar, divided
1 teaspoon vanilla extract
1 quart fresh strawberries, sliced
3 tablespoons cornstarch
1 (3 ounce) package strawberry Jell-O gelatin dessert
1 tablespoon lemon juice
1 cup water

Steps:

  • Combine in medium saucepan 1/2 cup of sugar, cornstarch, Jello, lemon juice, and water. Cook over medium heat, stirring constantly, until mixture comes to a boil and thickens. Set aside to cool slightly. Stir in sliced strawberries. Tear angel food cake into 1 inch pieces and toss with 2 cups of the Cool Whip. Press into 9x13 inch pan (I use glass so you can see the pretty layers). Set aside. Combine cream cheese, 1/2 cup remaining sugar, and vanilla in mixer bowl. Beat until smooth. Stir in remaining Cool Whip. Spread evenly over cake layer. Pour cooled strawberry mixture over cream cheese layer, spreading to cover cake evenly. Refrigerate 2 to 3 hours before serving. This recipe is so simple and delicious!! The recipe is one that I got from The Georgia Farm Bulletin. When my sweet Mother was alive she got their bulletin each month. They have such good recipes. Strawberries are so plentiful and sweet this time of year. I needed something quick (and of course yummy) for a covered dish...

1 can(s) sweetened condensed milk
1/4 c fresh lemon juice
8 oz cool whip, thawed
1 large angel food cake (or 2 small rectangular ones)
4 c fresh strawberries (sliced, mashed and sweetened)**
fresh strawberries for garnish
** I DIDN'T SWEETEN THEM -THEY WERE ALREADY SWEET -AND THE CONDENSED MILK IS SWEETENED. I ALSO DIDN'T MASH MINE -JUST SLICED THEM AND CUT EACH SLICE INTO ABOUT 4-6 PIECES. I LIKE IT A LITTLE CHUNKY.

Steps:

  • 1. Gather all ingredients.
  • 2. Mix sweetened condensed milk and lemon juice together. Then fold in thawed Cool Whip.
  • 3. Tear cake into pieces, or slice smaller cakes into approximately 1-inch pieces.
  • 4. Layer 1/2 of the cake pieces in 9x13 inch baking dish.
  • 5. Pour 2 cups of strawberries over cake.
  • 6. Spread 1/2 of Sweetened Condensed Milk mixture over strawberries. Repeat by layering with other half of ingredients -beginning with the cake and ending with the topping (sweetened condensed milk mixture).
  • 7. Garnish with fresh strawberries, if desired. Cool in refrigerator until ready to serve. Best when made a few hours in advance.

1 tube Angel Food Cake (10in)
1 pint Strawberries, crushed
1 tbs milk
1 pint strawberries, sliced
1 tub 12 oz cool whip
Strawberry fans (optional)
Mint leaves (optional)

Steps:

  • 1. Cut cake horizontal into 3 layers. Place1 cake layer on serving plate. Stir crushed strawberries and milk into 1 1/2 cups of whipped topping in large bowl. 2. Spread 1/2 of strawberry mixture on cake layer. Arrange 1/2 if the sliced strawberries on top of strawberry mixture. Repeat layers, ending with cake. 3. Frost tops and sides with whipped topping. Refrigerate at least one hour or until ready to serve. 4. Decorate top of cake with strawberry fans and mint leaves if desired.

Scrumptious, light and oh, so delicious!!! This is actually a sponge cake so it has no fat other than all those egg yolks!!! Worth every one!! Enjoy!!

CAKE
1 c ap flour...i used organic unbleached
few grains of salt
6 large eggs , separated
1 c sugar
1 Tbsp lemon juice
1 tsp lemon zest, grated
1 Tbsp cold water
STRAWBERRIES AND TOPPING
4 c fresh strawberries
sugar to taste...i used about 2 tbsps for every cup of berries but you can adjust to your taste
fresh strawberries, washed and stems left on for decoration
1 16 oz container of fresh whipping cream
powdered sugar, to taste
1 tsp vanilla extract

Steps:

  • 1. MAKE CAKE: Preheat oven to 325 Stir flour and salt together. Beat egg yolks until thick and pale and gradually beat in sugar.Stir in lemon juice, zest and water. Fold in dry ingredients.Mix well.Beat egg whites until stiff but not dry:fold into batter. mix in well. Bake in an UNGREASED 10 inch tube pan for one hour or until top springs back when lightly touched. Remove and invert pan on a cooling rack and let hang for 1 hour or until cool. Loosen cake with a spatula and shake out of pan.
  • 2. Wash , stem and cut up about 3 cups of fresh strawberries. Put into a large bowl and sprinkle with granulated sugar. Let sit at room temperature , stirring occasionally ...you will eventually have berries in syrup. whip cream till firm, add vanilla and powdered sugar to taste. Continue whipping until stiff but not butter! To serve: Slice cake, pour about 2 tbsps of berries and syrup over cake slice, add a couple of spoons of whipped cream and garnish with fresh berries . I also drizzled a chocolate wine sauce on the plate first. ENJOY!!
