Ooey, gooey, and oh so creamy, this gooey butter cake is such a treat. It is like a chocolate covered strawberry, in cake form. Decadent and rich, we loved every bite. Our chocolate chips didn't swirl as lovely as we would have liked so we ended up spreading them a little bit. Still delicious!

1 box milk chocolate cake mix
4 eggs
2 stick butter, separated, melted
1 pkg cream cheese (8 oz.)
1 lb powdered sugar
1/3 c cocoa powder
1/2 c strawberries, frozen, thawed and drained well
1 tsp vanilla extract
1/4 c strawberry preserves, heated for drizzling
1/3 c mini chocolate chips

Steps:

  • 1. Mix together dry cake mix, 1 egg, and 1 stick of melted butter until a smooth dough forms. Press in the bottom of a buttered 9x13 pan.
  • 2. In the same bowl, mix remaining eggs, cream cheese, sugar, vanilla, cocoa powder, the second stick of butter (melted), and strawberries until smooth and creamy.
  • 3. Pour on top of the dough in pan. Drizzle with strawberry preserves and swirl to make it pretty.
  • 4. Bake at 350 degrees for 40-50 minutes. Don't over bake, you want the middle to be a little bit jiggly. It will set as it cools. As soon as you remove the cake from the oven, sprinkle with the mini chocolate chips.
  • 5. After about 3 minutes when they are soft, use a spoon or knife to swirl the melted chips on the top. Serve with whipped cream.

1 strawberry cake mix (i use duncan hines)
4 eggs
1 stick butter, melted
1 lb powdered sugar
1 8oz. cream cheese
1 tsp vanilla extract
2 or 3 Tbsp strawberry jam

Steps:

  • 1. Preheat oven to 350. Mix your cake mix, 2 eggs, melted butter by hand then spread in a greased 13x9 baking dish.
  • 2. In a mixer mix powdered sugar, cream cheese, other 2 eggs, and vanilla and pour over strawberry batter.
  • 3. Then I Drop small spoonfuls of strawberry jam onto cream cheese mixture and swirl it gently. Bake at 350 for 40 minutes or until cake test done in center. remove and let cool. Sprinkle top of cake with extra powdered sugar.

4 large eggs, divided

CRUST
1 cup cake flour
3 tablespoons granulated sugar
1/3 cup butter, softened
FILLING
1 1/4 cups granulated sugar
3/4 cup butter, softened, 1 1/2 cups
1 egg
1 cup all-purpose flour
2/3 cup evaporated milk
1/4 cup light corn syrup
1 teaspoon vanilla
1 tablespoon powdered sugar
TOPPING
1 pound strawberries, quartered
2 cups heavy whipping cream

Steps:

  • Preheat the oven to 350 degrees. MAKE THE CRUST Whisk together cake flour and sugar in a medium bowl. Cut in the butter with a pastry cutter or two knives until the mixture resembles fine crumbs and starts to cling together. Press the mixture into the bottom and up the sides of a 10" cast iron skillet. This step is a lot harder than it sounds, but be patient and use the back of a spoon to help spread/press the mixture down. I also stuck mine in the fridge for a bit to make the butter less sticky. MAKE THE FILLING Cream the butter and sugar until fluffy and pale yellow (about 2 to 3 minutes). Mix in the egg until just combined. Alternate adding the flour and evaporated milk, mixing after each addition. Mix in the corn syrup and vanilla. Pour the filling into the crust and sprinkle the top with powdered sugar. (I forgot to do this, and did it afterwards. Oops). BAKE AND ASSEMBLE THE CAKE Bake for 25 to 35 minutes or until cake is nearly set (mine was probably ready around 30 minutes). Some jiggle is fine - do not overcook! It'll finish setting up as it cools. Let it cool in pan for 2 hours. In the meantime, beat heavy cream to stiff peaks. Pile heaps of fresh strawberries into the center of your cooled, set gooey butter cake, top with a mountain of freshly whipped cream, and serve. NOTE If you don't have a skillet, I believe you can bake this in a greased 9-inch square baking dish (I'd use a glass one if you have it, and check it early and often. Remove when there's some jiggle left.) Let us know how it goes if you try it this way for all the other skilletless people!
