This is a restaurant style strawberry glazed pie. Fresh berries are tossed with a glaze, and then chilled until serving time. This is also good made with peaches, using peach gelatin instead of strawberry.

6 cups sliced fresh strawberries
⅔ cup white sugar
1 cup water
4 tablespoons strawberry flavored Jell-O®
4 tablespoons cornstarch
1 (9 inch) prepared graham cracker crust

Steps:

  • Mix together the sugar, water, gelatin and cornstarch in a medium large saucepan. Boil for one minute. Remove from heat.
  • Fold in the sliced strawberries, toss until well coated. Pour into the graham cracker crust.
  • Chill until well set. Serve topped with whipped cream.

1 Basic Flaky Pie Crust for a 9-inch pie
1 tablespoon egg white, lightly beaten
1/4 cup sugar
3 tablespoons cornstarch
1 cup liquid cran/raspberry concentrate, thawed, undiluted
3/4 cup water
4 cups strawberries, rinsed, hulled, dried, and halved

Steps:

  • Make dough:
  • Remove the dough from the refrigerator. If necessary, allow it to sit for about 10 minutes or until it is soft enough to roll.
  • Using a pastry cloth and sleeve rubbed with flour or two sheets of plastic wrap lightly sprinkled with flour, roll the dough 1/8 inch thick or less and large enough to cut a 13-inch circle. Use an expandable flan ring or a cardboard template and a sharp knife as a guide to cut out the circle. Transfer the dough to the pie pan. Fold under the excess and crimp the border using a fork or your fingers. Cover it loosely and refrigerate for a minimum of 1 hour and a maximum of 24 hours.
  • Preheat the oven to 425°F at least 20 minutes before baking.
  • Line the pastry shell with parchment, pleating it as necessary so it fits into the pan, and fill it with rice or dried beans. Bake for 20 minutes. Carefully lift out the rice or beans with the parchment. With a fork prick the bottom and sides and bake 5 to 10 minutes more or until the crust is a pale golden. Check after 3 minutes and prick any bubbles that may have formed.
  • Cool the crust on a rack for 3 minutes, so it is no longer piping hot, then brush the bottom and sides with the egg white.
  • Make the filling:
  • In a 2-quart saucepan, mix together the sugar and cornstarch. Gradually stir in the cran/raspberry concentrate and water until smooth. Over medium heat, bring to a boil, stirring constantly. Boil for 1 minute. Remove the pan from the heat and cool completely.
  • Gently fold in the strawberries and spoon the filling into the baked pastry shell. Refrigerate for 4 hours or until set.
  • Store:
  • Refrigerated up to 2 days.
  • Note:
  • If the fruit is very acidic, the glaze will only keep 1 day.

A long time family favorite, fresh strawberries in a delicious glaze piled onto a baked crust then topped with whipped cream, you can use a regular baked pie crust or a graham pie crust, a purchased graham cracker crust makes this easy but of coarse you may make your own crust --- I have even added in strawberry extract for even more flavor in the glaze, but that is only optional --- plan ahead the pie must chill for about 4 hours or until completely set before topping with the whipped cream, prep time includes chilling time.

7 cups sliced fresh strawberries (sliced in half or in thirds)
2/3 cup sugar
1 cup water
1/3 cup strawberry gelatin (I use Jell-O gelatin for this)
1/4 cup cornstarch (measured out exactly 1/4-cup)
3 -4 drops red food coloring (or as desired)
1 (9 inch) pie pastry (use a deep-dish crust baked and cooled completely, or can use a prepared graham cracker crust)
2 cups whipped cream (or to taste)
1 cup fresh sliced strawberry, for the top (optional)

Steps:

  • In a lage saucepan place the sugar, water, strawberry gelatin powder and cornstarch; bring to a boil and boil mixing constantly for about 1 minute.
  • Remove from heat and add in red food colouring (use as much food colouring as you wish to acheive the colour desired).
  • Fold in 7 cups sliced strawberries; toss well with a wooden spoon or spatula to combine.
  • Transfer to prepared crust.
  • Refrigerate for about 4 hours or until completely set.
  • Top pie with whipped cream.
  • Place more sliced strawberries on top of whipped cream if desired in a decorative fashion.

A recipe from my Great Aunt's recipe box, clipped from the local newspaper. From the red strawberry stains on the recipe, I am guessing this is a good one. Prep time does not include chilling time. The original version called for regular cream cheese, but these days I would use neufchatel.

12 ounces cream cheese or 12 ounces neufchatel cheese, at room temperature
3/4 cup granulated sugar, divided
2 large eggs
1/2 teaspoon vanilla extract
1 10 inch graham cracker pie crust
1 cup sour cream
1 quart fresh strawberries, washed,drained well,hulled
1 cup water
2 tablespoons cornstarch
1 tablespoon lemon juice
red food coloring, as needed

Steps:

  • Mix together the cream cheese, 1/2 cup of the sugar, eggs, and vanilla until light and smooth.
  • Spread into the prepared graham cracker crust.
  • Bake in a preheated oven at 350 F for 35-40 minutes (Cover crust with a pie shield or a ring of foil if it starts to overbrown).
  • As soon as the pie comes out of the oven, immediately spread the sour cream on top.
  • Cool completely.
  • Place the best looking whole strawberries (tips upward) across the surface of the pie (save some for the topping).
  • Mash any remaining berries and combine with 1 cup water in a small pan; cook for 5 minutes.
  • Pour through a sieve and return the sieved juices back to the pan.
  • Mix the remaining 1/4 cup sugar with the cornstarch and add to the berry juice, along with lemon juice.
  • Cook, stirring constantly, until thickened and clear.
  • Add a few drops of red food coloring; let cool.
  • Carefully spoon glaze over the pie, then chill pie well before serving.

1 1/4 c sugar
1/3 c flour
1/8 tsp salt
2 c strawberries (fresh)
2 c (1" pieces) fresh rhubarb
2 Tbsp butter

  • 1. Combine 1 1/4 cups sugar, salt,and flour.

I make this strawberry pie often when strawberries are in season, this is a very good recipe for a glazed pie. I always top it off with real whipped cream, and then a couple more fresh strawberries on top of the cream, so delicious! Prep time does not include cooling the glaze, but it includes refrigeration time. If you prefer a more sweeter glaze, just add in more sugar.

1 (9 inch) baked pie crusts (completely cooled)
1/2 cup white sugar
3 tablespoons cornstarch
1 cup water
1 dash salt

3 -4 drops red food coloring
4 cups sliced fresh strawberries, sliced in halves

  • Bake the pie crust, let cool completely; set aside.
