STRAWBERRY GLACE PIE

Strawberry Glace Pie image

This is my favorite strawberry pie; it has a fresh, light flavor. I much prefer it to those with jello or cream cheese. This is adapted from an old Farm Journal cookbook & is a family favorite. There are many recipes on Zaar that are close to this one, but no exact matches.

Categories     Fruit Desserts

Number Of Ingredients 6

one baked pie shell, 9 inches
6 cups strawberries, about 1 1/2 quarts
1 cup sugar
2 tablespoons cornstarch
1/2 cup water
one package cream cheese, softened, 3 ounces

Steps:

  • 1. bake pie shell. Mash enough strawberries to make 1 cup. Mix sugar and cornstarch in 2 quart pan.
  • 2. Stir in water and mashed strawberries gradually. Cook over medium heat, stirring constantly, until mixture thickens and boils. Boil and stir one minute; cool.
  • 3. Beat cream cheese until smooth; spread on bottom of pie shell. Fill shell with whole strawberries, pour cooked strawberry mixture over top. Refrigerate until set, at least three hours.
  • 4. For peach glaze pie: substitute 5 cup sliced peaches, seven medium, for the strawberries. To prevent discoloration, use an ascorbic acid mixture as directed on package. For raspberry glaze pie: substitute raspberries for the strawberries.

Tips:

  • For a flakier crust, use cold butter and water. Cut the butter into small pieces and work it into the flour until it resembles coarse crumbs.
  • Do not overwork the dough, as this will make it tough. Work the dough just until it comes together.
  • Chill the dough for at least 30 minutes before rolling it out. This will make it easier to handle and prevent it from shrinking in the oven.
  • When rolling out the dough, use a light touch. Do not press down too hard, as this will make the dough tough.
  • Bake the pie in a preheated oven. This will help the crust to cook evenly.
  • Let the pie cool for at least 15 minutes before slicing and serving. This will allow the filling to set.

Conclusion:

Strawberry Glacé Pie is a delicious and refreshing dessert that is perfect for any occasion.
