Yield 6

Number Of Ingredients 6

15 ounces (425g) washed, hulled strawberries, halved (about 4 cups; see note)
3 ounces granulated sugar (1/4 cup plus 2 tablespoons; 85g)
1/4 ounce (1 tablespoon plus 1 1/2 teaspoons; 5g) freeze-dried strawberry powder, optional (see note)
3/4 teaspoon fresh lemon juice from one lemon (3g)
1/8 teaspoon Diamond Crystal kosher salt; for table salt, use half as much by volume
3 ounces strawberry jam (1/4 cup plus 2 tablespoons; 85g)

Steps:

  • In a blender, combine strawberries, sugar, freeze-dried strawberry powder (if using), lemon juice, and salt, and process until very smooth, about 30 seconds.
  • Pour purée into a medium bowl, add jam, and whisk until thoroughly combined.
  • Divide evenly between six 3-fluid-ounce popsicle molds and freeze until solid, at least 8 hours (to make filling the molds easier, you can transfer the puréed strawberry base back to the blender jar or to a measuring cup or another vessel with a spout first). To unmold, follow your popsicle mold's instructions.

Time 2h10m

Yield 6

Number Of Ingredients 7

½ cup grapefruit juice
1 cup orange juice
¼ cup water
2 tablespoons lemon juice
2 tablespoons white sugar
1 (8 ounce) container vanilla yogurt
½ cup chopped strawberries

Steps:

  • Place the grapefruit juice, orange juice, water, lemon juice, and sugar in a saucepan over medium heat, and bring to a boil. Cook, stirring, until the sugar has dissolved, about 5 minutes. Remove from heat, and chill the mixture in the freezer until very cold, about 10 minutes.
  • Mix the vanilla yogurt with the strawberries, and chill.
  • Spoon a little of the cold juice mixture into 6 ice pop molds, using about 1 1/2 tablespoon of mixture for each mold. Place the molds into the freezer until the juice freezes, 30 minutes to 1 hour. Tips:

  • Select ripe, flavorful strawberries: The quality of your strawberries will greatly impact the taste of your freezer pops. Choose berries that are deep red, plump, and have a sweet aroma.
  • Use fresh citrus juice: Freshly squeezed citrus juice will provide the best flavor for your freezer pops. Avoid using bottled or store-bought juice, as it may contain additives or preservatives that can alter the taste.
  • Adjust the sweetness to your liking: The amount of honey or sugar you add to your freezer pops is a matter of personal preference. Start with a small amount and taste test the mixture before adding more. You can always add more sweetener, but it's difficult to remove it once it's been added.
  • Use popsicle molds or small cups: You can use a variety of molds to make your freezer pops. Popsicle molds are readily available at most kitchen stores, or you can use small paper cups or silicone muffin cups.
  • Freeze the freezer pops for at least 4 hours: The freezer pops will need at least 4 hours to freeze solid. You can leave them in the freezer for up to 2 weeks.

Conclusion:

Strawberry citrus freezer pops are a refreshing and delicious treat that can be enjoyed by people of all ages. They are easy to make and can be customized to your liking. With a few simple ingredients, you can create a healthy and flavorful snack that will help you beat the heat this summer.
