1 cup all-purpose flour
1 cup rolled oats
2 teaspoons baking powder
½ teaspoon baking soda
½ teaspoon ground cinnamon
½ teaspoon salt
1 egg, beaten
½ cup milk
¼ cup light olive oil
½ cup sugar
½ pint chopped fresh strawberries

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Grease 12 muffin cups.
  • In a large bowl, mix flour, oats, baking powder, baking soda, cinnamon and salt. In a separate bowl, whisk together egg, milk, olive oil and sugar. Mix in strawberries. Stir strawberry mixture into oat mixture just until evenly moist. Spoon into prepared muffin cups.
  • Bake 18 to 20 minutes in the preheated oven, until a knife inserted in the center of a muffin comes out clean.

½ cup strawberry yogurt fruit spread
½ cup margarine, softened
¾ cup white sugar
¾ cup brown sugar
1 egg
1 teaspoon vanilla extract
½ cup olive oil
2 cups all-purpose flour
½ teaspoon baking soda
½ teaspoon ground cinnamon
3 ¼ cups rolled oats

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
  • In a large bowl, cream together the strawberry spread, margarine, white sugar and brown sugar until smooth. Beat in the egg and vanilla, then stir in the olive oil. Combine the flour, baking soda and cinnamon; stir into the creamed mixture. Mix in the oats until well blended. Drop dough by heaping spoonfuls 2 inches apart onto the prepared cookie sheets.

This is just a little something I concocted this morning in lieu of how chilly it is outside (yes yes I know 50 degrees isn't very cold, but it is for florida). It combines my two favorite things--cinnamon and strawberries!

1/2 cup oats
3/4 cup water
1 teaspoon Equal sugar substitute
1/2 cup strawberry, chopped
1 tablespoon cinnamon

Steps:

  • Combine the oats and water in a bowl, stir and add about half the Equal and cinnamon.
  • Microwave for 1 minute.
  • Stir, then add in the strawberries and stir again.
  • Microwave for 1 more minute.
  • Stir again and add in the remainder of the Equal and the cinnamon.
  • Microwave again for 1 minute. (It should be done at this point, but depending on your microwave or how gooey you like your oatmeal you can heat it longer).
  • Enjoy!
