STRAWBERRY CAKE ROLL

Strawberry Cake Roll image

I got this recipe from my sister, who is the best cook ever. I tried it this week and my family loved it so much that I will be making it often, especially during strawberry season. It is not too time-consuming, as you would think and it is well worth the effort. Hope you enjoy it as much as my family has and a great BIG THANK...

Categories     Cakes

Time 2h25m

Number Of Ingredients 6

2/3 c all-purpose flour
1 tsp baking powder
1/4 tsp salt
3/4 c sugar
1/2 tsp vanilla extract
4 eggs

Steps:

  • 1. Sift together flour, baking powder and salt and set aside. In a large mixing bowl, beat eggs with electric mixer on high speed for 5 minutes, gradually beat in granulated sugar. Beat in vanilla. Add to dry ingredients, mix well. Spread batter into 15 X 10 X 1-inch jelly roll pan that has been sprayed with baking spray with flour. Bake at 375 degrees for 10-12 minutes or until cake springs back when lightly touched. Cool 5 minutes. Turn cake onto a kitchen towel dusted with confectioners' sugar. Roll up cake in the towel. Cool completely on a wire rack.
  • 2. INGREDIENTS FOR THE FILLING; 2 8-OZ CARTONS OF SPREADABLE STRAWBERRY CREAM CHEESE 1 7-OZ JAR OF MARSHMALLOW CREME 3 CUPS SLICED STRAWBERRIES Mix together well. Unroll cake and spread mixture to within 1/2 inch of edges. Top with 2-1/2 cups strawberries. Roll up again. Place seem side down on a platter. Refrigerate for at least 2 hours. Just before serving, garnish with remaining strawberries.

Tips:

  • Mise en place: Before you start baking, make sure you have all your ingredients and equipment ready. This will help you stay organized and avoid scrambling.
  • Use fresh ingredients: The fresher your ingredients, the better your cake roll will be. This is especially true for the strawberries.
  • Don't overmix the batter: Overmixing the batter will make the cake roll tough. Mix just until the ingredients are combined.
  • Bake the cake roll at the right temperature: The ideal temperature for baking a cake roll is 375 degrees Fahrenheit. If the oven is too hot, the cake roll will brown too quickly and the inside will be undercooked. If the oven is too cool, the cake roll will take too long to bake and will be dry.
  • Don't overfill the cake roll pan: The batter should only fill the pan about halfway. If you overfill the pan, the cake roll will be too thick and difficult to roll.
  • Roll the cake roll immediately: After the cake roll is baked, remove it from the oven and roll it up immediately. This will help prevent the cake roll from cracking.
  • Let the cake roll cool completely before frosting: Before you frost the cake roll, let it cool completely. This will help the frosting set properly.

Conclusion:

A strawberry cake roll is a delicious and impressive dessert that is perfect for any occasion. With its light and fluffy cake, sweet and tangy strawberry filling, and creamy frosting, this cake roll is sure to be a hit with everyone who tries it. So next time you're looking for a special dessert to make, give this strawberry cake roll a try - you won't be disappointed!
