STRAWBERRY TART WITH ALMOND BUTTER CRUST
Steps:
- Put almonds and water in processor or blender and reduce to coarse powder. Add butter and blend well, scraping down sides of bowl several times. Press butter through sieve and chill until ready to use.
- Put flour, salt, sugar and butter in bowl of food processor. Turn machine on and off briefly 4 or 5 times. Butter should be in pieces the size of lima beans. Then process for about 10 seconds while adding water quickly. Stop before ball forms. If you do not have food processor, this can be done by hand. Do not knead too much or crust will become tough.
- Remove mixture from work bowl and form ball. Cover with plastic wrap and refrigerate for 2 hours.
- Preheat oven to 400 degrees.
- On lightly dusted surface, roll out pastry ball to form crust slightly larger than tart pan (most pans are 10 to 12 inches in diameter). If you have too much dough, roll excess into ball, wrap and freeze.
- Butter tart pan well and gently lay in crust, pinching sides to fit pan. Place aluminum foil over crust and lay pinto beans or any weight over it and bake for 10 minutes. Remove foil and bake another 10 minutes or until crust is golden brown. Set aside to cool.
- When crust is cool spread cheese mixture over bottom, then layer of sliced strawberries. Melt jam with Cognac in saucepan and brush it over to glaze the fruit. Chill before serving.

- Preheat the oven to 350 degrees. MAKE THE CRUST Whisk together cake flour and sugar in a medium bowl. Cut in the butter with a pastry cutter or two knives until the mixture resembles fine crumbs and starts to cling together. Press the mixture into the bottom and up the sides of a 10" cast iron skillet. This step is a lot harder than it sounds, but be patient and use the back of a spoon to help spread/press the mixture down. I also stuck mine in the fridge for a bit to make the butter less sticky. MAKE THE FILLING Cream the butter and sugar until fluffy and pale yellow (about 2 to 3 minutes). Mix in the egg until just combined. Alternate adding the flour and evaporated milk, mixing after each addition. Mix in the corn syrup and vanilla. Pour the filling into the crust and sprinkle the top with powdered sugar. (I forgot to do this, and did it afterwards. Oops). BAKE AND ASSEMBLE THE CAKE Bake for 25 to 35 minutes or until cake is nearly set (mine was probably ready around 30 minutes). Some jiggle is fine - do not overcook! It'll finish setting up as it cools. Let it cool in pan for 2 hours. In the meantime, beat heavy cream to stiff peaks. Pile heaps of fresh strawberries into the center of your cooled, set gooey butter cake, top with a mountain of freshly whipped cream, and serve. NOTE If you don't have a skillet, I believe you can bake this in a greased 9-inch square baking dish (I'd use a glass one if you have it, and check it early and often. Remove when there's some jiggle left.) Let us know how it goes if you try it this way for all the other skilletless people!

My family has been making this for years, we love it. I'm sure you will too. Thanks for the great reviews. You must try the strawberry butter. I like the butter to be very cold or frozen when I eat it on the warm bread. I know the bread is good on its own, but it is excellent with the butter. It is definately worth your time and extra strawberries to make the butter. I'm sure it would make good french toast. I've never tried it, because it doesn't last long enough in my house for me to make french toast out of it. Enjoy!
