STRAWBERRY BREAD
2 1/4 c fresh strawberries hulled and chopped
2 c all purpose flour
1/2 c white sugar
1/4 c brown sugar
1/2 tsp cinnamon
1/2 tsp salt
1 tsp baking soda
2 large eggs
1/2 c vegetable oil
1 tsp vanilla
STRAWBERRY BUTTER
1/2 c unsalted butter (1 stick)
2 Tbsp powdered sugar
1/4 c fresh strawberries hulled and finely chopped

Steps:

  • 1. Preheat oven to 350 degrees. Grease and flour 9×5 inch loaf pan.
  • 2. Sprinkle 2 1/4 cups chopped strawberries lightly with a little bit of the measured sugar; set aside. In a medium bowl whisk together the flour, sugar, brown sugar, cinnamon, salt and baking soda.
  • 3. In a large bowl beat the eggs, then add oil and vanilla. Stir in the strawberries that you set aside. Add the flour mixture to the strawberry mixture in three parts; stirring just until combined after each part.
  • 4. Pour batter into prepared loaf pan. Bake for 50-60 minutes or until a toothpick inserted in the top comes out clean.
  • 5. Using mixer whip butter until creamy and light. Beat in powdered sugar until light and fluffy. Fold in 1/4 cup chopped strawberries.

1 pint strawberries, rinsed, hulled, quartered, and mashed with a fork
1 3/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/4 teaspoon baking powder
1/4 teaspoon salt
1 cup sugar
2 large eggs

Steps:

  • Preheat oven to 350 degrees. Butter an 8-by-4-inch loaf pan. In a small saucepan, bring strawberries to a boil over medium heat. Cook, stirring, 1 minute. Set aside.
  • In a medium bowl, whisk together flour, baking soda, cinnamon, baking powder, and salt; set aside. With an electric mixer, cream butter, sugar, and eggs in a mixing bowl until light and fluffy. Add flour mixture alternately with 1/3 cup water, beginning and ending with flour. Fold in reserved strawberries.

My family has been making this for years, we love it. I'm sure you will too. Thanks for the great reviews. You must try the strawberry butter. I like the butter to be very cold or frozen when I eat it on the warm bread. I know the bread is good on its own, but it is excellent with the butter. It is definately worth your time and extra strawberries to make the butter. I'm sure it would make good french toast. I've never tried it, because it doesn't last long enough in my house for me to make french toast out of it. Enjoy!

1 1/2 cups flour
1 cup sugar
1 1/2 teaspoons cinnamon
1/2 teaspoon salt

1 (10 ounce) package whole frozen strawberries, thawed & drained (they will mash in the mixer)
1 (10 ounce) package strawberries, thawed & drained
1 cup butter, softened

  • Mix flour, sugar, cinnamon, salt & soda.
