Tips:
- Ensure your egg whites are at room temperature before starting. This will help them reach their full volume when beaten.
- Beat the egg whites gradually, starting on low speed and increasing to high. This will help prevent the egg whites from becoming grainy.
- Add the sugar to the egg whites in three additions. This will help prevent the egg whites from deflating.
- Fold the flour mixture into the egg whites gently. Over-mixing will deflate the egg whites and result in a dense cake.
- Bake the cake in a preheated oven. This will help the cake rise evenly.
- Do not open the oven door while the cake is baking. This will cause the cake to fall.
- Let the cake cool completely before frosting. This will help prevent the frosting from melting.
