Spinach, Strawberry, Mandarin Salad With Poppy Seed Dressing image

This is a wonderful and refreshing salad that I got from Best of Bridge. I played around with it a bit and added a few other fresh fruits to it. This is yummy and great to offset a very rich main dish, such as my Death to Dieter's Lasagna.

1 bag(s) fresh spinach (10 oz ready to eat in a bag)
11 oz mandarin oranges, drained
1 c fresh sliced strawberries

2 Tbsp sugar
1 pinch black pepper
1/2 tsp salt
GARNISH
2 Tbsp sugar
1/4 c sliced almonds

Steps:

  • 1. Mix celery, parsley, and onions. Refrigerate.
  • 2. Drain mandarin oranges and put them in the refrigerator. (You can keep some of the juice to add to the dressing also if you wish.)
  • 3. Wash and dry strawberries. Slice and refrigerate.
  • 4. DRESSING: Mix ingredients thoroughly and refrigerate. (The dressing will keep for several days.) Shake well before adding to the salad.
  • 5. GARNISH: To caramelize almonds, put sugar and almonds in a frying pan on medium heat and stir constantly until almonds are lightly browned. Place them on a piece of wax paper to cool.
  • 6. SERVE: Place spinach in a bowl. Add the celery mixture, mandarin oranges, strawberries, and almonds. and dressing. Toss and Serve!
  • 7. Place salad on a plate and drizzle with dressing.

Tips:

  • Select ripe and flavorful strawberries: Look for strawberries that are bright red, plump, and have a sweet aroma. Avoid berries that are bruised or have green patches.
  • Choose seedless mandarins: Seedless mandarins are easier to eat and make the salad more enjoyable.
  • Use fresh mint leaves: Fresh mint leaves add a refreshing flavor to the salad. If you don't have fresh mint, you can use dried mint, but the flavor will be less intense.
  • Don't overdress the salad: A light dressing is all that is needed to enhance the flavors of the fruit. Too much dressing will overpower the delicate flavors.
  • Serve the salad immediately: This salad is best enjoyed fresh. The strawberries and mandarins will start to lose their flavor and texture if they are stored for too long.

Conclusion:

This strawberry and mandarin salad is a delicious and refreshing way to enjoy fresh fruit. It is perfect for a light lunch or snack, and it can also be served as a side dish. The combination of sweet strawberries, tangy mandarins, and fresh mint is sure to please everyone. So next time you are looking for a healthy and flavorful salad, give this recipe a try.
