STRAWBERRIES AND CREAM SCONES

Strawberries and Cream Scones image

I took a leap and veered from Mom's original shortcake recipe to create this scone recipe with cream and strawberries. Instead of a short biscuit, I made light sweet-cream scones for the shortcake part. The difference was delightful! -Martha Laviolette, South Rockwood, Michigan

Tips:

  • Prep Ahead: You can prepare the scone dough and cut it into triangles up to 24 hours in advance. Then, wrap the scones tightly in plastic wrap and refrigerate until ready to bake. When you're ready to bake, simply remove the scones from the refrigerator and let them come to room temperature for about 30 minutes before baking.
  • Use Cold Butter: For the flakiest scones, use cold butter. You can even freeze the butter for 30 minutes before grating it. This will help to keep the butter from melting too quickly in the dough, which will result in a more tender scone.
  • Don't Overmix: Overmixing the dough will result in tough scones. Mix the dough just until it comes together, then stop. You may still see some streaks of butter in the dough, and that's okay.
  • Chill the Dough: Chilling the dough for at least 30 minutes helps to develop the flavor and makes it easier to handle. If you're short on time, you can chill the dough for just 15 minutes, but 30 minutes is ideal.
  • Bake the Scones Hot: Preheat your oven to the highest temperature it will go, then reduce the temperature to 400°F before baking the scones. This will help to create a crispy exterior and a tender interior.
  • Serve Warm: Scones are best served warm, right out of the oven. You can also reheat them in a 350°F oven for 5-10 minutes.

Conclusion:

These Strawberries n' Cream Scones are the perfect treat for any occasion. They're light, fluffy, and bursting with strawberry flavor.
