Number Of Ingredients 16

1 pound snap peas, ends snapped and veiny strings removed, rinsed and drained
1 tablespoon minced garlic
2 tablespoons rice wine or sake
1/2 teaspoon salt, or to taste
1/2 pound shiitake mushrooms, stems trimmed and lightly rinsed
1/2 pound oyster mushrooms, stems trimmed and lightly rinsed (If unavailable, substitute shiitake mushrooms.)
1/2 pound cremini mushrooms, stems trimmed and lightly rinsed
1 tablespoon minced garlic
1 tablespoon minced fresh ginger
3 1/2 tablespoons good quality oyster sauce
1 1/2 tablespoons rice wine or sake
1 1/4 teaspoons sugar
1/2 teaspoon toasted sesame oil
1/2 cup chicken broth or water
1 teaspoon cornstarch
2 1/2 teaspoons canola or corn oil

Steps:

  • With a sharp knife, cut the mushrooms on the diagonal into quarters, depending on the size. Prepare the seasonings and set by the stove.
  • Heat a wok or a heavy skillet until very hot, add 1 teaspoon of oil and heat until hot. I got this out of an old cook book that came with the electric wok that my parents bought back in the 80's. I jotted down a few of the recipes. I'd love to have that book again. It sure did have some great recipes in it. The store didn't have any straw mushrooms the day I took this picture so I had to use regular mushrooms. It's delicious either way! Anyway, enjoy!

2 tablespoon(s) cornstarch
1/2 teaspoon(s) salt
1/2 teaspoon(s) sugar
1 pound(s) pork meat, sliced into thin strips
2 tablespoon(s) soy sauce
1 tablespoon(s) dry sherry
4 tablespoon(s) peanut oil
3 - carrots, diagonally sliced
1 can(s) baby corn, drained
1 can(s) water chesnuts, drained
1 cup(s) chicken stock
1 can(s) straw mushrooms, drained
1/4 pound(s) snow peas, prepared
- hot cooked rice

Steps:

  • Mix first 3 ingredients in a bowl; add meat, toss to coat well. Add soy sauce and wine; toss again. Marinate 30 minutes.
  • Heat 2 Tbsp. oil in uncovered wok. Add pork, stir-fry until pinkness is gone. Remove with a strainer; set aside.
  • Heat remaining 2 Tbsp. oil in wok add carrots; stir-fry for 2 minutes. Add corn and waterchesnuts; stir-fry 20 seconds. Return pork to wok with stock; stir.
  • Add mushrooms and snow peas. Stir-fry 30 seconds. Serve immediately over rice.

4 cups heavy cream
1/2 cup shaoxing wine
1/3 cup oyster sauce
1/4 cup unsalted butter
1 lb fresh udon noodles, al dente
