Stracciatella is often referred to as 'Italian egg drop soup,' which is fine, but knowing the name actually means little, torn rags or shreds works so much better metaphorically. When you've been run ragged, stracciatella is always there for you. As you eat this, hopefully with some nice crusty bread, imagine all those little 'rags' floating in the bowl are all your torn-up problems, both real and imagined. They were there, and then they were gone. You just won--with soup.

2 tablespoons semolina flour
3 large eggs

Steps:

  • Bring broth to a simmer in a pot over high heat. Taste broth and adjust salt and pepper as needed.
  • Whisk eggs, parsley, semolina flour, grated Parmigiano Reggiano and pecorino Romano cheeses, salt, pepper, cayenne pepper, and nutmeg together in a bowl until well blended.
  • While stirring the simmering broth, slowly pour egg mixture into the broth. Bring mixture back up to a simmer. The liquid will be slightly cloudy initially and clear as broth heats.

1 (3 pound) whole chicken
3 quarts water
11 carrots
6 stalks celery
2 onions
½ cup uncooked white rice
6 ounces baby spinach, chopped
½ cup grated Romano cheese
2 teaspoons salt
1 teaspoon ground black pepper
½ teaspoon dried oregano
1 tablespoon lemon juice
3 (14 ounce) cans chicken broth
4 eggs, lightly beaten

Steps:

  • Cut up chicken into large pieces and place in a large soup pot with the water. Chop 8 carrots, 3 stalks of celery and 1 onion and place them in the pot as well. Bring to a boil, then cover, reduce heat and simmer 45 minutes, until chicken is tender. Remove chicken and reserve stock. When cool enough to handle, bone chicken and cut meat into bite-size pieces.
  • Process reserved stock in a blender or food processor or using an immersion blender and return it to the pot with the chicken meat. Chop the remaining 3 carrots, 3 stalks of celery and 1 onion and stir into the chicken mixture with the rice. Bring to a boil, then reduce heat and simmer until rice is tender, about 20 minutes.
  • Remove chicken mixture from heat and stir in spinach, Romano, salt, pepper, lemon juice and oregano. Set aside.
  • In large saucepan, bring chicken broth to a boil. Pour the eggs into the boiling broth, slowly, in a thin stream. Remove the broth from the heat and stir it into the chicken mixture. Serve hot.

Steps:

  • Set a large Dutch oven or soup pot over medium-high heat. Add oil. When it shimmers, add the onions and a generous pinch of salt. Reduce heat to medium. Stirring occasionally, cook onions for 10 to 15 minutes until tender. It's fine if they start to take on a little color.
  • In a large measuring cup or medium bowl with a spout, thoroughly whisk together the eggs, ½ cup grated Parmesan, nutmeg, black pepper, and a generous pinch of salt.
  • When onions are tender, add Parmesan rind and stock to pot. Increase heat to high and bring to a boil. Reduce to a strong simmer. 1 tablespoon extra virgin olive oil
3 to 4 plump garlic cloves, minced
1 14-ounce can chopped tomatoes, or 1 1/2 cups grated tomatoes
Salt to taste
1 basil sprig
2 quarts vegetable broth or chicken stock
4 eggs
1/4 cup bread crumbs or semolina
6 tablespoons freshly grated Parmesan
2 tablespoons finely chopped parsley
2 tablespoons finely chopped basil or chives
Freshly ground pepper
Optional: Cooked soup pasta for serving

Steps:

  • Heat the olive oil over medium heat in a large, heavy soup pot or Dutch oven. Add the garlic. Stir until fragrant, about 30 seconds. Add the tomatoes and basil sprig. Cook, stirring, until the tomatoes have cooked down slightly and smell fragrant, about 10 minutes. Season to taste, and add the vegetable or chicken stock. Bring to a simmer, cover and simmer 20 minutes. Season to taste with salt and pepper.
  • In a large mixing bowl, beat together the eggs, bread crumbs or semolina, Parmesan, parsley and basil or chives. Beat until frothy.

1 1/2 quarts chicken or turkey stock
Salt
freshly ground pepper to taste
2 large or extra large eggs
1 1/2 tablespoons semolina
1/3 cup freshly grated Parmesan (1 1/2 ounces)
1 6-ounce bag baby spinach, or 1 bunch spinach, stemmed, washed, dried and coarsely chopped

Steps:

  • Place the stock in a large saucepan or soup pot. Remove 1/3 cup and set aside. Bring the rest to a simmer. Season to taste with salt and freshly ground pepper. If there is any visible fat, skim it away.
  • Beat the eggs in a bowl, and stir in the 1/3 cup of stock, the semolina and the cheese.
  • Stir the spinach into the simmering stock, then drizzle in the egg mixture, scraping all of it in with a rubber spatula. Stir very slowly with the spatula, paddling it back and forth until the little "rags" form. Taste, adjust seasoning and serve at once.

A marriage made in heaven! I love Italian wedding soup, and I love Stracciatella, so when I found this recipe at "The Food of Love", it was love at first sight--or, rather, love at first bite! This is great comfort food. You can make the meatballs with ground chicken or beef or turkey or sausage. For the greens you can use either spinach or escarole. And, for the pasta you can use either acine de pepe -or- orzo. Recipe makes enough to serve 2-3 people, but is easily doubled or even tripled.

1 slice white bread, crust removed
1/4 cup milk
garlic clove, minced
6 ounces ground turkey
1 tablespoon olive oil
1 egg yolk
2 teaspoons fresh parsley, minced

4 cups chicken broth
2 ounces orzo pasta
1/2 bunch fresh Baby Spinach
1 egg
1 tablespoon water
2 tablespoons grated parmigiano
2 tablespoons chopped fresh parsley

Steps:

  • Make the Meatballs:.
  • Place the bread in a bowl and pour the milk over it. Let it soak for 5 minutes.
  • While the bread soaks, saute the garlic in the olive oil until translucent.
  • Add the garlic in oil, the ground turkey, the egg yolk, the parsley, and salt and pepper to the bowl. Use a fork to gently mix together--the less you handle the meat, the lighter the meatballs will be.
  • Divide mixture into 12 equal parts and form into balls.
  • Bring broth to a simmer and gently drop in the meatballs. Simmer 5-10 minutes, just until cooked through. Remove from the broth with a slotted spoon and set aside; keep warm.
  • Make the Soup:.
  • Return the broth to a boil and add the orzo. Cook for 10 minutes.
  • When orzo is almost done, add the spinach and return the meatballs to the soup. Add parsley.
  • For the Stracciatella:.
  • Break the egg into a small bowl, add the water, and stir briefly. Stir in the grated parmigiano cheese.
  • Quickly stir the soup, then drizzle in this egg-cheese mixture slowly so that the heat of the soup will quickly form the mixture into cooked strands.

  • Place milk in a medium saucepan. Scrape in seeds from vanilla bean; add bean. Bring to a simmer, whisking often. Whisk sugar, yolks, and salt in a medium bowl until well blended, about 1 minute.   • Dip bottom of loaf pan in 1 inch warm water in a roasting pan 10 seconds, then lift tortoni out of pan using parchment paper. Transfer to a platter. Peel paper from tortoni.
  • Let stand 5 minutes to soften slightly. Cut into 6 triangular wedges. Thin sauce with additional cream if necessary and serve with tortoni.

1/2 cup sugar
1/4 cup powdered milk
1 teaspoon vanilla extract
1/4 cup light corn syrup
1 pinch salt
4 ounces bittersweet chocolate, finely chopped

Steps:

  • Place a 1-quart freezer container in the freezer.
  • In a heavy saucepan, combine the milk, sugar, powdered milk, vanilla and corn syrup, and bring to a boil. Whisk until the sugar and powdered milk have dissolved. Remove from the heat, pour into a bowl, and allow to cool-or chill in the refrigerator-until mixture is room temperature. Add the salt.
  • Freeze in an ice-cream maker according to manufacturer's instructions.
  • Shortly before the gelato is ready, melt the chocolate in a microwave-safe bowl at 50-percent power, or set in a heatproof bowl over a saucepan of simmering water, for about 2 minutes. Cool to 100 degrees F (tepid).
  • When the gelato has reached the desired texture, drizzle in the chocolate in a very fine stream while continuing to run the machine. You can control the stream by using a spatula for the drizzling. If the stream is too thick or too fast, the chocolate will form into clumps instead of flecks.

5 cups chicken stock or 5 cups prepared broth
3 garlic cloves, thinly sliced
1 small carrot, peeled and julienned
1 stalk celery, julienned
2 tablespoons freshly grated parmesan cheese
4 tablespoons finely chopped fresh flat-leaf parsley
1 lb boneless skinless chicken breast
1/2 lb spinach leaves, washed well
2 eggs, lightly beaten
salt & freshly ground black pepper

Steps:

  • Cut chicken breasts into 1/2 inch thick slices.
  • In a saucepan, combine the stock and garlic and bring to a boil over medium-high heat.
  • Add the carrot and celery, cover, and cook until the vegetables are just tender, about 4 minutes.
  • Add the parmesan, 2 TBS of the parsley, the chicken and the spinach.
  • Return to a simmer and cook until the chicken is just cooked through, the spinach is wilted but still bright green and the cheese is melted, about 2 minutes.
  • Remove from the heat.
  • Pour the eggs into the soup and stir back and forth with a fork until white threads of cooked egg appear.
  • Season to taste with salt and pepper.

1 6-ounce bag baby spinach, or 1 bunch spinach, stemmed, washed, dried and coarsely chopped

Steps:

  • 1. Place the stock in a large saucepan or soup pot. Remove 1/3 cup and set aside. Bring the rest to a simmer. Season to taste with salt and freshly ground pepper. If there is any visible fat, skim it away. 2. Beat the eggs in a bowl, and stir in the 1/3 cup of stock, the semolina and the cheese. 3. Stir the spinach into the simmering stock, then drizzle in the egg mixture, scraping all of it in with a rubber spatula. Stir very slowly with the spatula, paddling it back and forth until the little "rags" form. Taste, adjust seasoning and serve at once.
