Time 45m

Yield 4 serving(s)

Number Of Ingredients 13

2 tablespoons butter
8 ounces cremini mushrooms, sliced
2 garlic cloves, minced
1 (14 ounce) can chicken broth
1 cup water
1 tablespoon dry sherry
8 ounces spaghetti, broken in half
2 cups cooked turkey, cubed
2 cups half-and-half, at room temperature (regular or fat-free)
1 cup frozen peas
1/2 cup parmesan cheese, grated (divided)
1 tablespoon Italian parsley, minced
fresh ground black pepper, to taste

Steps:

  • In large skillet, melt butter over medium-high heat.
  • Add mushrooms and garlic; cook until mushrooms are lightly browned, about 4 minutes.
  • Add broth, water, and sherry; bring to a boil.
  • Stir in spaghetti.
  • Reduce heat, cover, and simmer until most of the liquid is absorbed, about 10 minutes.
  • Stir in turkey, half-and-half, and peas.
  • Cook stirring occasionally until pasta is tender and sauce is slightly thickened, about 5 minutes.
  • Remove from heat; stir in half of the parmesan, parsley, and pepper.
  • Serve with remaining parmesan.

Tips:

  • Use a good quality pasta. Tetrazinni is a rich and flavorful dish, so it's important to use a pasta that can hold its own. Look for a pasta that is firm and has a slightly nutty flavor, such as penne or rotini.
  • Cook the pasta al dente. This means cooking the pasta until it is just tender, but still has a slight bite to it. Overcooked pasta will make the dish mushy.
  • Use a variety of mushrooms. This will add depth and flavor to the dish. You can use any type of mushrooms you like, but some good options include cremini mushrooms, shiitake mushrooms, and oyster mushrooms.
  • Don't skimp on the sauce. The sauce is what makes tetrazinni so delicious, so be sure to use plenty of it. You can use a store-bought Alfredo sauce, or you can make your own. If you're making your own, be sure to use a good quality white wine and Parmesan cheese.
  • Top the dish with a crispy topping. This could be anything from bread crumbs to crushed crackers. The topping will add texture and flavor to the dish.

Stovetop one-dish turkey/chicken tetrazzini is a quick, easy, and delicious meal that's perfect for a weeknight dinner. It's also a great way to use up leftover turkey or chicken.
