1 lb ground beef
1 (8 ounce) can tomato sauce
1 (14 ounce) can kidney beans, undrained
1/2 cup water
1 (1 1/4 ounce) package taco seasoning
1 (8 ounce) package corn muffin mix
1 cup shredded cheddar cheese
1/4 cup sliced green onion

Steps:

  • In a large skillet, brown ground beef over medium-high heat; drain.
  • Stir in tomato sauce, beans, water and taco seasoning mix. Bring to a boil; reduce heat, cover and simmer 5 minutes.
  • Prepare corn muffin mix according to package directions. Drop small spoonfuls of muffin batter over meat mixture in a skillet.

1 small onion, chopped
2 c frozen mixed veggies
1 can(s) cream of mushroom soup
1/2 can(s) fill 1/2 the soup can with milk
1 tsp garlic powder
2 tsp beef soup base
3-4 c mashed potatoes
1 c shredded cheddar cheese

  • 1. In a large skillet, brown ground beef and onion over medium heat; drain.
  • 2. Stir in the thawed mixed veggies. Reduce heat to medium-low; cover and cook for 5 minutes.
  • 3. Stir together cream of mushroom soup, milk, garlic poswer and beef boullion granules until well blended; stir into ground beef mixture. Cook over medium heat; stirring frequently for until well combined.
  • 4. Spread mashed potatoes over the top; sprinkle with cheese. Cover and cook just until potatoes are heated through and cheese is melted.
