  • Oven@ 350.
  • Cook chicken and cut into bite sized pieces.

  • Heat both cans of soup with the milk in a saucepan until hot.

1/4 cup butter or 1/4 cup margarine, melted
1 package Stove Top stuffing mix, for turkey
1 (10 ounce) can cream of mushroom soup
1/2 cup sour cream
2 cups frozen mixed vegetables
2 cups diced cooked chicken or 2 cups cooked turkey
2 green onions, sliced

Steps:

  • Combine butter, contents of vegetable/seasoning pouch and stuffing crumbs in 2 qt (2 L) casserole.
  • Reserve 1 cup (250 mL) of mixture.
  • Spread remaining stuffing crumbs evenly in bottom of dish.
  • Blend soup and sour cream in a large bowl.
  • Stir in remaining ingredients; spread over stuffing crumbs in pan.
  • Sprinkle reserved stuffing over top.
  • Cover and bake at 350°F (180°C) for 35 minutes.

2 medium potatoes, scrubbed and diced about 1 inch
2-3 Tbsp olive oil
2 boneless, skinless, chicken breasts
1 can(s) cream of chicken soup
1/2 can(s) half and half (that's half of the soup can measurement.)
1/3 c shredded parmesan cheese
1 Tbsp fresh rosemary sprig
3/4 c frozen peas

Steps:

  • 1. Boil potatoes til just fork tender, drain. Over medium high heat, coat bottom of large skillet with olive oil. Add potatoes and lightly brown on all sides.
  • 2. Wash and pat dry chicken breasts. Liberally salt and pepper. Put in skillet, pushing potatoes to the edges. Brown thoroughly on both sides.
  • 3. Meanwhile, in small bowl combine soup, half and half, and parmesan cheese. Mix well.
  • 4. Add soup mixture and rosemary to skillet, lower heat to low. Cover and simmer 20 minutes.
  • 5. Add peas and simmer another 5 minutes.

1 lb boneless skinless chicken breast
2 cups sliced mushrooms
1 onion, chopped
1 teaspoon salt
1/2 teaspoon pepper
2 tablespoons flour
4 cups milk
2 cups small shell pasta
1/2 cup prepared pesto sauce
1 red pepper, diced

Steps:

  • Heat 1 tbsp of the oil in a large pot over medium heat; cut chicken into 1 inch strips& brown in oil.
  • Remove from pot& keep warm.
  • Add remaining oil to pot; cook mushrooms, onion, salt& pepper, for about 5 minutes or until softened, stirring constantly.
  • Whisk flour into milk; gradually stir into pot, stirring to scrape any veggie bits that are stuck to the bottom and bring to a boil.
  • Stir in pasta& chicken, cover, reduce heat and simmer for 10 minutes or until pasta is almost tender& chicken is no longer pink.
  • Stir in pesto& red pepper; cook, uncovered for about 5 minutes or until pasta is tender& sauce is thickened.

3 1/2 lbs chicken pieces (skinless with bone in)
3 carrots, pared and cut in half
2 celery ribs, diced in 1 inch pieces
4 medium potatoes, peeled
1 tablespoon fresh parsley, chopped
24 fresh mushrooms, cleaned and diced
1 teaspoon basil
3 tablespoons butter
4 tablespoons flour
1/2 teaspoon paprika
salt and black pepper

Steps:

  • Place chicken pieces in a saucepan. cover with water and bring to a boil. skim off foam.
  • add carrots, celery and potatoes, parsley, basil.
  • add salt and black pepper according to your taste.
  • bring to a boil and cook for 30 minutes over medium heat.
  • add mushrooms, cook for 7 minutes.
  • remove saucepan from heat, and with a slotted spoon remove, chicken and veggies, and put aside, reserve liquid.
  • heat butter in a saute pan over medium heat.
  • lower heat, add flour, mix and cook for 3 minutes over low heat.
  • add 3 cups of reserved cooking liquid to pan.
  • stir well and cook sauce for 12 minutes over medium heat.
  • place chicken and veggies in sauce.
  • sprinkle with paprika and simmer for 5 minutes.
