SIMPLE BBQ RIBS

Simple BBQ Ribs image

Country-style ribs are cut from the loin, one of the leanest areas of pork. These ribs are seasoned, boiled until tender, then baked with your favorite barbeque sauce. That's it! Back to simplicity, back to the country life. Sigh.

STOVETOP SMOKED BABY BACK RIBS WITH MAPLE BBQ SAUCE

Stovetop Smoked Baby Back Ribs with Maple BBQ Sauce image

Provided by Trisha Yearwood

Categories     main-dish

Time 3h45m

Yield 2 to 4 servings

Number Of Ingredients 15

1/4 cup packed dark brown sugar
1 tablespoon plus 1 teaspoon kosher salt
2 teaspoons sweet smoked paprika
2 teaspoons ground cumin
2 teaspoons garlic powder
1 teaspoon onion powder
1 teaspoon freshly cracked black pepper
1/2 teaspoon chili powder
One 2- to 2 1/2-pound rack pork baby back ribs
1 cup ketchup
1/4 cup good-quality maple syrup
1 tablespoon molasses
2 teaspoons apple cider vinegar
1 teaspoon Worcestershire sauce
1 teaspoon soy sauce

Steps:

  • Put 4 cups hickory wood chips into a container and cover with 4 cups of water. Allow the chips to soak for 30 minutes. Drain and set aside.
  • Meanwhile, assemble the dry rub for the ribs. In a small mixing bowl, combine the brown sugar, salt, paprika, cumin, garlic powder, onion powder, black pepper and chili powder.
  • Cut the rib rack into 4 pieces. Put a cooling rack over a baking sheet and put the ribs on top. Let the ribs come to room temperature, then rub the meat all over with the dry rub.
  • Set up a stovetop smoker: Make a shallow bowl out of heavy-duty aluminum foil that fits into a 5- to 7-quart Dutch oven, with the sides of the aluminum bowl coming 2 inches up the sides of the pot; put it in the bottom of the Dutch oven. Put the soaked and drained wood chips over the aluminum foil in an even layer. Put a small round of aluminum foil on top of the wood chips. Put a 6-inch steamer basket (make sure the handle is attached in the center for easy removal) on top of the aluminum round. Transfer the smoker to the stovetop.
  • Put the ribs in the steamer basket; it is okay if the pieces overlap slightly. Cover the smoker and create a strong seal by wrapping the rim of the lid with heavy-duty aluminum foil. Turn the heat to medium high and smoke the ribs for 45 minutes. Turn off the heat and carefully remove the aluminum foil seal and lid.
  • Preheat the oven to 250 degrees F.
  • Remove the ribs and steamer basket from the Dutch oven and set aside. Remove the remaining foil and wood chips carefully, as grease from the ribs may have dripped down; use tongs to lift the wood chips and foil bowl out and transfer them to a baking sheet to cool before discarding. Put the ribs back into the empty Dutch oven and cover with the lid. Slow roast until the ribs are completely tender, an additional 2 hours. The meat should pull away from the bones very easily.
  • Meanwhile, pour the ketchup, maple syrup, molasses, vinegar, Worcestershire and soy sauce into a small saucepot and stir to combine. Place over medium heat and heat just until simmering. Keep warm.
  • Remove the pot from the oven and brush the ribs generously with the BBQ sauce. Preheat the broiler to high.
  • Broil the ribs until the sauce is caramelized and bubbly, about 5 minutes. Serve immediately.

STOVETOP, COUNTRYSTYLE RIBS, IRIS

Stovetop, Countrystyle Ribs, Iris image

These are perfect for the colder days leading into winter. We enjoyed them with braised winter greens, sweet potato pone and hot water cornbread. I let mine marinate overnight in the fridge for added flavor, and put in a half cup of Sweet Baby Rays' barbeque sauce right at the end.

Provided by iris mccall

Categories     Ribs

Time 1h

Number Of Ingredients 8

6 countrystyle pork rib pieces, about 1" thick
3 Tbsp minced garlic
3 Tbsp onion powder
2 Tbsp fresh ground black pepper
3 Tbsp emeril's essence seasoning
3 Tbsp a-1 sweet mesquite rub
2 Tbsp famous daves' rib rub
1 1/2 c apple juice (your brand)

Steps:

  • 1. Gather your ingredients. Prick your ribs with a fork and set aside.
  • 2. Place all ingredients in a 1 gallon ziploc bag and seal. Shake well to coat meat and place in a pyrex dish in the fridge overnight.
  • 3. Remove ribs from marinade, and let them come up to temperature, about 30 minutes. Heat a skillet on the stove top til almost smoking. Coat bottom of skillet with vegetable oil and brown ribs on both sides long enough for a crust to form.
  • 4. Remove ribs from skillet after well browned to a plate. Add marinade to the skillet, and reduce heat to a simmer. Return ribs to the skillet and cover with well fiiting lid.
  • 5. Let simmer for 30 minutes, turning once. Check the thickness of the sauce, if it starts to stick scrape skillet well. Add half cup of sauce and half a cup of water. Turn off heat and let sit 10 minutes. Then serve with your choice of sides.
  • 6. Note: I DON'T ADVISE RINSING YOUR MEAT. I RECENTLY SAW ON THE VIEW THAT THE SPLASHING WATER ONLY HELPS SPREAD POSSIBLE CONTAMINATES, AND IF YOU COOK IT LONG ENOUGH, YOU WILL KILL SALMONELLA, E COLI, ECT. BUT USE YOUR OWN DISCRETION!!

CHINESE-STYLE BARBECUED RIBS

Chinese-Style Barbecued Ribs image

These are the best oven-roasted ribs ever, and they can also be finished on a grill for extra smoky flavor. Creating steam in the oven is the key to tender meat. The ingredients here are close to the ones used by traditional Cantonese barbecue masters to produce sticky-salty-sweet meat that has a reddish, caramelized crust - with ketchup standing in for Chinese red fermented tofu. (It can be left out if desired.) Although these ribs are presented as an appetizer in many American Chinese restaurants, barbecued meat is traditionally a main course, served with freshly cooked rice and a green side like smashed cucumber salad or stir-fried bok choy.

Time 6h

Yield 4 to 8 servings

Number Of Ingredients 11

3 cloves garlic, smashed and peeled
4 scallions, white and pale green parts only, plus additional sliced scallion for garnish
3/4 cup hoisin sauce
1/2 cup ketchup, or 4 tablespoons tomato paste or Chinese red bean paste (nan ru)
1/4 cup honey or light corn syrup, more to taste
1/4 cup soy sauce, more to taste
1/3 cup Chinese rice wine or vodka
1/4 cup rice vinegar or cider vinegar
1/2 teaspoon five-spice powder
2 racks baby back or St. Louis-style pork spareribs, 5 to 10 pounds total (see note)
Cilantro leaves, for garnish

Steps:

  • In a food processor or blender, mince garlic and scallions. Add hoisin, ketchup, honey, soy sauce, rice wine or vodka, rice vinegar and five-spice powder. Process until well blended. Taste for sweetness; the mixture should be sweet like barbecue sauce, not candy. Adjust the taste with honey, soy sauce and vinegar.
  • Set aside 1/3 cup marinade for basting. Transfer remaining marinade to a container or pan large enough to hold the ribs, or to large resealable plastic bags. Add ribs and turn until well coated. Refrigerate at least 4 hours, and up to 2 days, turning occasionally in the marinade.
  • Heat oven to 300 degrees. Set up a rimmed baking sheet (or two) with an oven-safe wire rack that fits inside, the kind you'd use for cooling cookies. Line the bottoms of the pans with foil or nonstick baking mats. Place the racks inside the pans and place the empty pans on the bottom rack of the oven. Pour in hot water until it comes about halfway up the sides of the pan. (Do not skip the water: The steam helps cook the meat to the right tenderness.)
  • When the oven is hot, remove the ribs from the marinade and place on the racks, meaty side up. Bake without basting, 1 hour for baby back ribs, 2 hours for St. Louis style ribs. Check the water level occasionally to make sure it hasn't cooked off.
  • Remove ribs from the oven and raise the oven temperature to 450 degrees. Pour off any water from the baking sheet and return the ribs to the racks. (Alternatively, you can finish the ribs on a medium-hot grill; see below.)
  • Return ribs to the oven and roast (or grill), basting 2 or 3 times with reserved marinade, for 20 to 30 minutes (less time for baby backs, more for spareribs). Watch the ribs carefully to make sure that the edges don't burn, and don't baste them too close to the end; they should be dry and sticky, not wet on the surface.
  • Use a big knife to cut between the bones, making sure that each rib has meat on both sides. Mound on a platter, sprinkle with scallions and cilantro, and serve immediately.

Tips:

  • Choose the right ribs: Look for ribs with good marbling and a nice red color. Avoid ribs that are too thin or have a lot of bone.
  • Prepare the ribs: Remove the membrane from the back of the ribs to help the sauce penetrate. You can also trim the excess fat if desired.
  • Season the ribs: Use a flavorful rub to season the ribs before cooking. A good rub will typically include salt, pepper, garlic powder, onion powder, and paprika.
  • Cook the ribs slowly and low: The best way to cook ribs is to cook them slowly and low over indirect heat. This will help the ribs to become tender and fall off the bone.
  • Baste the ribs: Basting the ribs with a flavorful sauce or marinade will help to keep them moist and flavorful. Baste the ribs every 30 minutes or so.
  • Cook the ribs until they are fall-off-the-bone tender: The ribs are done cooking when they are fall-off-the-bone tender. You can check this by inserting a toothpick or skewer into the thickest part of the ribs. If the toothpick or skewer slides in easily, the ribs are done.

Conclusion:

Stove-top BBQ beef or pork ribs are a delicious and easy-to-make meal. By following these tips, you can make sure that your ribs turn out tender, flavorful, and fall-off-the-bone delicious. So fire up your stovetop and get cooking!
