GINGER CHICKEN STIR-FRY WITH VEGETABLES
Steps:
- 1. In a medium sized bowl, toss the chicken strips with the scallions, about half the garlic and ginger, the soy sauce, sherry and sesame oil. 2. Heat a large, non-stick skillet (or wok) over high heat. Add 2 T of the vegetable oil. Add the celery and broccoli and stir-fry for 1 minute. Add bok choy and stir-fry for 1 minute. Add mushrooms, remaining garlic, chicken broth, salt and little fresh ground pepper. Stir fry until broccoli is bright green but still a little crisp (about 2 minutes). Add bean sprouts and stir-fry for an additional 30 seconds. Transfer to platter/ 3. Add remaining 2 T of vegetable boil to hot skillet. Add the chicken mixture. Stir fry until the chicken loses its raw color and gets a little brown (about 3 minutes). Don't over-cook or the chicken will get tough. Return the vegetables to the pan and toss to heat through. 4. Sprinkle with toasted sesame seeds to taste. 5. Serve with hot rice (we use brown basmati rice).

- Heat Wok, add tablespoon peanut oil, allow the oil to heat.
- Add the 'The Vegetables' (Spring onions, red capsicum, snow peas, and carrot) in the wok and stir-fry for four mins, remove to separate bowl. Note: Cook vegetables until your preferred texture, it you like them crisp cook them for 4 mins if you like them soft cook them longer.
- Add the prawns in wok and stir-fry until they are covered with oil.

- 1. Trim any excess fat from the steak. Slice the steak diagonally across the grain into 1/4 inch thick strips.
- 2. Combine the soy sauce and the next 6 ingredients in a large bowl; add steak, and toss to coat. Cover and marinate in the refrigerator for 2 to 3 hours; drain, reserving the marinade. Set the steak and the marinade aside.
- 3. Wash the snow peas; trim ends, and remove the strings. Set aside.
- 4. Pour 1 tablespoon oil around the top of a preheated wok or large skillet, coating the sides. Heat at medium-high (375) for 2 minutes. Add the broccoli and carrot, and stir-fry for 3 to 4 minutes. Add the reserved snow peas and green onions, and stir fry 2 to 3 minutes. Remove the vegetables from the wok; set aside, and keep warm.
- 5. Pour 1 tablespoon oil into the wok; add half of the reserved steak, and stir-fry for 2 minutes. Remove steak from the wok; set aside, and keep warm. Pour the remaining 1 tablespoon oil into the wok; add the remaining reserved steak and stir-fry 2 minutes. Return steak, marinade, and vegetables to the wok.
- 6. Combine the cornstarch and water; stir well. Add to the steak mixture, and stir-fry for 3 minutes or until the mixture is thickened. Stir in the cashews. Serve over rice.
