STIR FRIED MIXED PEPPERS & MUSHROOMS
I looked through 15 pages of Pepper recipes and could not find one even close so will post one. I do this recipe for a Sunday brunch or as a side dish for BBQ's. It is very colorful and tasty. Be sure not to cook the peppers too long, you only want to heat them through so they are still crisp. I often use left over oven fries and then leave out the mushrooms.

STIR-FRIED TOFU AND PEPPERS
This attractive stir-fry is inspired by a traditional Chinese dish called rainbow beef. The vegetarian version works well, and it's also easier to make. If you prefer a very firm tofu, take the extra time to weight it as directed in step 1. I am happy to skip this step and use firm tofu that hasn't been weighted.

Steps:
- Optional step for firmer tofu: Blot the tofu dry, wrap in a clean kitchen towel and place a cutting board on top. Let sit for about 15 minutes. Whether weighted or not, slice the tofu about 1/2 inch thick into 1- x 2-inch dominoes.
- Mix together 1 tablespoon of the soy sauce, 1 teaspoon of the brown sugar and 1 tablespoon of the oil in a medium bowl. Toss with the tofu, and stir to make sure all of the pieces are coated. Let sit for five to 10 minutes while you prepare the other ingredients.
- In a small bowl, stir together the remaining soy sauce and sugar, hoisin sauce and sesame oil. Set aside.
- Heat a large nonstick skillet or wok over high heat until a drop of water evaporates on contact. Add the oil, turn the heat to medium-high and add the peppers. Stir-fry for a couple of minutes, until the peppers begin to soften, and add the garlic and ginger. Stir-fry for 20 seconds, until the garlic and ginger begin to smell fragrant, and add the tofu, dried red pepper flakes and green onions. Stir-fry two minutes, give the sauce a stir and add to the pan. Cover and cook for three minutes. Remove the lid, stir the ingredients in the pan, and taste and adjust seasonings. Serve with rice or noodles.

Tips:
- Prep your ingredients in advance: Cut your mushrooms and bell peppers into uniform pieces so that they cook evenly. If you're using dried mushrooms, be sure to rehydrate them according to the package instructions before cooking.
- Use a large skillet or wok: This will give your ingredients plenty of room to cook without overcrowding.
- Heat your skillet or wok over high heat: This will help to sear the mushrooms and bell peppers and create a nice caramelized flavor.
- Don't overcrowd the pan: If you add too many ingredients at once, they won't cook evenly. Cook the mushrooms and bell peppers in batches if necessary.
- Stir-fry the mushrooms and bell peppers until they are tender: This will usually take about 5-7 minutes. You want the vegetables to be cooked through but still have a little bit of crunch.
- Add your sauce or seasonings: Once the mushrooms and bell peppers are cooked, add your desired sauce or seasonings. Stir to combine and cook for an additional minute or two.
- Serve immediately: Stir-fried mushrooms and bell peppers are best served hot and fresh. Enjoy them as a side dish or main course.
Conclusion:
Stir-fried mushrooms and bell peppers is a quick and easy dish that is packed with flavor. It's a great way to use up leftover vegetables or to add a healthy side dish to your next meal. With a few simple ingredients and a little bit of time, you can create a delicious and satisfying dish that the whole family will enjoy.
