Yield Makes 4 side portions

Number Of Ingredients 6

2 tablespoons olive oil
2 to 3 garlic cloves, thinly sliced
Zest of half a lemon
10 ounces spinach leaves (8 to 10 cups)
Pinch sea salt
Pinch crushed red pepper flakes, optional

Steps:

  • Add olive oil, garlic and the lemon zest to a wide skillet over medium heat. Cook, stirring often, until the oil is bubbling around the garlic, about 30 seconds. Pile the spinach leaves into the pan and add a generous pinch of salt. Wait about 30 seconds or until the bottom layer of leaves have started to wilt, and then toss the leaves around the pan. As the spinach cooks, keep tossing so that all the leaves have a chance to hit the bottom of the skillet.

STIR-FRIED SPINACH WITH GARLIC

Stir-fried Spinach with Garlic image

"Spinach has often been regarded with disdain in the west, probably because it is usually overcooked. This is a delicious, time-honored, southern Chinese recipe. The spinach is quickly stir-fried and then seasoned. It is very simple to prepare." Ken Hom from CHINESE COOKING. (We halved this recipe last night and enjoyed it hot with Mr. Hom's FISH IN HOT AND SOUR SAUCE. Wonderful!)

Time 11m

Yield 4 serving(s)

Number Of Ingredients 5

750 g fresh spinach
1 tablespoon oil
1 tablespoon finely chopped garlic
1 teaspoon salt
1 teaspoon sugar

Steps:

  • Wash the spinach thoroughly.
  • Remove all stems leaving just the leaves.
  • Heat the wok (or large frying pan) until it is VERY hot.
  • Add the oil.
  • When the oil it is very hot and slightly smoking, add the garlic and salt.
  • Stir-fry both for 10 seconds.
  • Add the spinach and stir-fry for about 2 minutes to coat the spinach leaves thoroughly with the oil, garlic and salt.
  • When the spinach has wilted to about one-third of its original size, add the sugar.
  • Continue to stir-fry for another 4 minutes.
  • Transfer to a plate and pour off any excess liquid.
  • Serve hot or cold.

Tips:

  • Choose fresh, tender spinach: Look for spinach with vibrant green leaves and no signs of wilting or yellowing.
  • Wash the spinach thoroughly: Rinse the spinach well under cold water to remove any dirt or debris.
  • Use a large skillet: This will help to ensure that the spinach cooks evenly and doesn't steam.
  • Heat the skillet over medium-high heat: This will help to quickly sear the spinach and prevent it from becoming watery.
  • Add the spinach in batches: Don't overcrowd the skillet, or the spinach will steam instead of stir-frying.
  • Stir-fry the spinach for only a few minutes: Spinach cooks very quickly, so overcooking it will make it limp and mushy.
  • Season the spinach with salt, pepper, and garlic: These simple seasonings will enhance the flavor of the spinach without overpowering it.
  • Add a squeeze of lemon juice: This will brighten up the flavor of the spinach and make it more refreshing.

Conclusion:

Stir-fried spinach with garlic and lemon zest is a quick, easy, and healthy side dish that can be enjoyed as part of a weeknight meal or a special occasion dinner. The spinach is cooked until it is tender and slightly wilted, but still retains its vibrant green color. The garlic and lemon zest add a bright, flavorful touch that complements the spinach perfectly. This dish is also a great way to get your daily dose of vegetables.
