- In a small bowl, mix together the sauce ingredients and set aside. Heat the oil in a large wok. Season the pork and sear in batches, then remove and set aside.
- Fry the garlic until golden - about 30 secs - then add the broccoli and onions. Stir-fry for 2 mins, then add the pork and cashews along with the sauce. Keep stir-frying for another 2-3 mins until everything is hot and simmering.

Steps:
- Spray non-stick skillet with cooking spray and place over medium heat.
- Add onion and cook 8 minutes, stirring occasionally. Remove from pan and set aside.
- Recoat pan with cooking spray and stir fry broccoli 3 minutes.
- Add broccoli to onion.
- Spray pan again and fry pork and red pepper for 4 minutes or until pork loses its pink color.
- Reduce heat. Stir in the green onions, sugar, ginger, and garlic and cook 30 seconds.
- Stir in onion and broccoli.
- Add chicken broth and soy sauce.
- Cook 1 minute.
- Drizzle with sesame oil and sprinkle with cashews.
- Serve over rice.

- Blitz the broccoli stalks in a food processor until finely chopped. Add the florets and pulse again to achieve a rice-like texture.
- Lightly toast the cashews in a wok or frying pan, then tip onto a plate and set aside. Heat the oil in a pan over a high heat and add the ginger, onion, pepper, carrot, garlic and chilli. Stir-fry for 2-3 mins until starting to brown, then put a lid on and cook for another 2 mins.
- Add the broccoli and 3 tbsp water and stir-fry for 3 mins until all the veg is tender. Pour in the tamari, lime juice and zest and coriander, stir well, then pour in the eggs and stir-fry very briefly to just set. - Cut acrooss the grain into 1/4-inch thin strips; set aside.
