STICKY RICE WITH CHINESE SAUSAGE

Sticky Rice with Chinese Sausage image

Sticky rice with Chinese sausage is a dim sum favorite, and really easy to make at home. You'll be delighted with this authentic Chinese sticky rice recipe!

Categories     Rice

Time 1h15m

Number Of Ingredients 16

2 cups uncooked sticky rice ((400g, also known as "Sweet Rice" or "Glutinous Rice"))
1 tablespoon oyster sauce
1 ½ tablespoons soy sauce
2 teaspoons dark soy sauce
¼ teaspoon sesame oil
¼ cup chicken stock ((60 ml))
½ teaspoon salt
2 tablespoons oil
¼ cup dried shrimp ((soaked for 15 minutes in warm water))
1 medium onion ((finely diced))
5 dried shiitake mushrooms ((soaked in warm water until softened and diced))
3 links Chinese sausage ((cut into small discs))
1 teaspoon Shaoxing wine
white pepper ((to taste))
2 scallions ((chopped))
Cilantro ((to garnish, optional))

Steps:

  • Cook the sticky rice according to the directions on the package and set aside to cool (we usually just make it in our rice cooker). You can also use our method for soaking and steaming the sticky rice to pre-cook it.
  • Combine the oyster sauce, soy sauces, sesame oil, chicken stock, and salt in a small bowl and set aside. Heat the oil in a wok over medium heat. Add the shrimp and stir-fry for 30 seconds to bring out the flavor. Next, add the onion, mushrooms and Chinese sausage, and stir-fry for another minute, taking care not to burn the onion. Add the Shaoxing wine and stir-fry for another 2 minutes.
  • Add all of the cooked sticky rice to the wok and break it up as much as possible with a spatula. Spoon half of the sauce mixture over the rice (it helps to add the sauce over any clumps of rice to help break them up). Mix well, using a scooping motion to ensure the rice doesn't stick to the bottom of the wok. Add the rest of the sauce and stir-fry until the rice is uniform in color.
  • Season with white pepper to taste and mix in the scallions. You can serve it as is...or if you want to get fancy, you can pack the rice into a nice round bowl rinsed in warm water and turn it over on a plate. Garnish with cilantro and serve.

STEAMED CHINESE STICKY RICE

Steamed Chinese Sticky Rice image

It is very important that you soak the rice ahead. Otherwise, the rice will not cook completely within the timeframe outlined below. The taro is optional in this recipe.

Provided by Lisa Lin

Categories     Rice

Time 9h15m

Number Of Ingredients 28

1 1/2 cups sticky rice (about 350g) (soaked for 6 to 8 hours)
water for cooking the rice
3 tablespoons dried shrimp (soaked for at least 30 minutes)
1 1/2 tablespoons dried scallops (soaked for at least 30 minutes)
1 1/2 tablespoon canola oil
1/4 cup diced shallots
1 link Chinese sausage (finely chopped (about 1/4 to 1/3 cup))
1/4 cup finely chopped Chinese cured pork (also called Chinese bacon)
1 1/2 teaspoons soy sauce
1 1/2 teaspoons cooking rice wine (optional)
1/8 teaspoon ground white pepper
1 1/2 tablespoons canola oil
1/4 cup diced shallots
2 cups peeled and diced taro ((see note 1))
1/4 teaspoon Chinese five-spice powder
1/8 teaspoon chicken bouillon powder (optional) ((see note 2))
pinch of kosher salt
1 tablespoon canola oil
1 1/2 cups mixed vegetables (can be peas, carrots, diced bell pepper, corn, etc.)
pinch of kosher salt or garlic salt
2 tablespoons soy sauce
1/2 tablespoon rice cooking wine (optional)
1 1/2 teaspoons sugar
1/2 teaspoon sesame oil
sliced scallions
large wok or deep sauté pan with lid (at least 12" wide (see note 3))
steaming rack
large stainless steel round pan (ideally 10" or wider)

Steps:

  • Drain the dried shrimp and scallops. Shred the scallops so that you can distribute them throughout the sticky rice. If the scallops are still too firm to shred, leave them whole and don't worry about the shredding. They'll soften completely after they steam with the sticky rice.
  • Heat a wok or sauté pan with 1 1/2 tablespoons oil over high heat. Once the pan is hot, add 1/4 cup of shallots and stir fry them for about 1 minute. Then, add the dried shrimp, scallops, Chinese sausage, and Chinese cured pork. Cook for about 30 seconds to 1 minute. Season with 1 1/2 teaspoons soy sauce, 1 1/2 teaspoons cooking wine (if using), and 1/8 teaspoon ground white pepper. Toss everything together.
  • Turn off the heat and transfer the flavoring bits to a bowl.
  • Drizzle 1 1/2 tablespoons oil in the wok or sauté pan over high heat. Add 1/4 cup chopped shallots and cook for 1 minute. Next, add the taro cubes and cook for 30 seconds to 1 minute. Add the five-spice powder, chicken bouillon powder (if using), and a pinch of salt. Toss everything together.
  • Turn off the heat and transfer the taro to a bowl.
  • Drizzle 1 tablespoon of oil in the wok or sauté pan over high heat. Add the vegetables and cook them for 2 to 3 minutes, until they're completely cooked. Season the vegetables with a pinch of salt or garlic salt.
  • Turn off the heat and transfer the vegetables to a bowl.
  • Lightly grease the cake pan with canola oil.
  • Drain the soaked glutinous rice and spread it over the pan. Pour 1/3 cup water over the rice. Smooth out the rice with your hands. Cover the rice with a layer of the taro (if using). Then, add the flavoring bits.
  • If you are using a wok to steam, fill it with about 2 inches of water. (Note: If you are using a large sauté pan, fill it with about 1 to 1 1/2 inches of water.) Cover the wok with a lid and bring the water to boil.
  • Place a steaming rack in the center of the wok. (Note: If you are using a wok, use a tall steaming rack; if you are using a sauté pan, use a shorter rack.)
  • Carefully place the pan of sticky rice over the steaming rack. The steam is very hot, so be careful here. Cover the wok with a lid and adjust the heat to medium-high. Steam the rice for 25 minutes.
  • Using oven mitts, remove the pan from the wok. Because a lot of water evaporates during the steaming process, pour another 2 cups of water into the wok.
  • Using a large spatula, flip everything over so that the rice is on top (I used a wok spatula similar to this one). Drizzle about 2 tablespoons of water around the edge of the pan. Carefully place the rice back over the steaming rack, and cover the wok with the lid. Steam the rice for an additional 5 to 10 minutes, until the rice is cooked through and soft in the center.
  • In a small bowl, mix the sauce ingredients together. Drizzle the sauce over the cooked rice and carefully toss everything together.
  • Sprinkle the vegetables over the rice and mix together. If you are finding it difficult to mix everything in a small pan, transfer the rice and vegetables to a large bowl to mix.
  • Serve the sticky rice in bowls. Garnish with sliced scallions, if you like. The sticky rice goes well with my garlic green beans, garlic cucumber salad, or pan-fried teriyaki tofu.

BASIC STICKY RICE

Time P1DT30m

Yield 4 to 6 servings or 6 1/2 cups

Number Of Ingredients 2

3 cups long-grain Thai sticky rice
3 cups long-grain Thai sticky rice

Steps:

  • Soak the rice in a container that holds at least twice the volume of rice: Cover the rice with 2 to 3 inches of room-temperature water and soak for 6 to 24 hours. If you need to shorten the soaking time, soak the rice in warm (about 100 degree) water for 2 hours. The longer soak gives more flavor and a more even, tender texture, but the rice is perfectly edible with the shorter soak in warm water.
  • Drain the rice and place in a steamer basket. Set the steamer basket over several inches of boiling water in a large pot or a wok. The rice must not be in or touching the boiling water. Cover and steam for 25 minutes, or until the rice is shiny and tender. Turn the rice over after about 20 minutes, so the top layer is on the bottom. Be careful that your pot doesn't run dry during steaming; add more water if necessary, making sure to keep it from touching the rice.
  • Turn the cooked rice out onto a clean work surface. Use a long-handled wooden spoon to flatten it out a little, then turn it over on itself, first from one side, then from the other, a little like folding over dough as you knead. This helps get rid of any clumps; after several foldings, the rice will be an even round lump. Place it in a covered basket or in a serving bowl covered by a damp cloth or a lid. Serve warm or at room temperature, directly from the basket or bowl. The rice will dry out if exposed to the air for long as it cools, so keep covered until serving.

CHINESE STIR-FRIED STICKY RICE WITH CHINESE SAUSAGE

Chinese Stir-Fried Sticky Rice with Chinese Sausage image

Glutinous rice (aka sticky rice) is slowly cooked on the stove, similar to the way risotto is cooked. This flavorful dish is worth the effort.

Provided by hello angie

Categories     Main Dish Recipes     Rice     Fried Rice Recipes

Time 5h6m

Yield 6

Number Of Ingredients 12

2 cups glutinous rice
8 dried shiitake mushrooms
⅓ cup dried shrimp
2 dried scallops
1 teaspoon olive oil
3 eggs, beaten
3 links Chinese sausage, diced
2 cups hot water, or more as needed
2 tablespoons light soy sauce, or to taste
2 teaspoons dark soy sauce
1 teaspoon white sugar
½ cup chopped cilantro, or to taste

Steps:

  • Soak rice in a large bowl of water until mostly translucent, about 4 hours. Rinse and drain thoroughly.
  • Soak mushrooms, shrimp, and scallops in 3 separate bowls of water until softened, about 15 minutes. Drain, reserving mushroom water and discarding other water. Chop mushrooms, shrimp, and scallops into small pieces.
  • Heat olive oil in a large skillet over medium heat. Pour eggs into skillet, swirling to spread out into a thin layer. Cook until mostly firm, about 1 minute. Flip and cook until no longer runny, 3 to 5 minutes.
  • Transfer egg to a cutting board and allow to cool slightly. Roll into a long tube and slice into thin ribbons.
  • Stir Chinese sausage into the same skillet over medium heat. Cook and stir until fragrant and some of the oil is released, about 3 minutes. Add mushrooms, shrimp, and scallops; cook for 3 to 5 minutes. Transfer sausage mixture to a bowl.
  • Stir drained rice into the skillet. Cook and stir until lightly toasted, 1 to 2 minutes. Pour in reserved mushroom water, stirring constantly until water is absorbed. Add hot water, 1/2 cup at a time, stirring until water is absorbed between each addition. Cook until rice is softened, about 25 minutes.
  • Season rice with light soy sauce, dark soy sauce, and sugar. Stir in egg ribbons and sausage mixture. Top with cilantro before serving.

WHOLE QUAIL WITH STICKY RICE WITH CHINESE SAUSAGE

Whole Quail with Sticky Rice with Chinese Sausage image

Provided by Food Network

Categories     main-dish

Time 1h25m

Yield 8 servings

Number Of Ingredients 22

2 cups short grain glutinous rice
2 Chinese sausages, cut into rounds
1/4 cup roasted, peeled, and diced chestnuts
3 tablespoons sugar, more if needed
2 tablespoons soy sauce
2 tablespoons dried scallop, reconstituted in water
2 tablespoons gingko nuts
2 tablespoons cubed Chinese ham
1 tablespoon red dates, reconstituted in water
1 tablespoon shao xing cooking wine
1 teaspoon dried shrimp, finely chopped
1/4 cup edamame peas
2 tablespoons thinly sliced (on the bias) scallion greens
8 (4 ounce) boneless quail
1 scallion green, blanched, shocked, and squeezed dry
1/3 cup soybean oil
Salt and freshly ground black pepper
1 teaspoon pulverized fresh ginger, or to taste
1 cup soybean oil
2 cups garlic chives, cut into 2-inch lengths
Salt
Soybean oil

Steps:

  • To make the quail with rice:
  • Rinse the rice 2 times in a bowl of cold water and drain. In a large ovenproof pot, combine the rice, sausages, chestnuts, sugar, soy sauce, dried scallops, gingko nuts, ham, dates, wine, and dried shrimp. Add a scant 3 cups of water, put in a steam oven, and cook until cooked through and soft, 30 to 45 minutes. Fold in the edamame. Taste and adjust the sugar, soy sauce, and salt. Let cool and then fold in the scallions. Stuff about 1/2 cup of the rice mixture into each quail.
  • To make the scallion oil:
  • Put the scallions in a bowl, cover with the oil, and season with salt and pepper, to taste. Puree in a blender and strain through a very fine-mesh sieve, gently pressing to extract the pulp. Add the ginger, to taste.
  • To make the garlic chives:
  • In a small skillet heat the oil over medium heat. Saute the garlic chives, seasoning with salt, until slightly caramelized. You can add a bit of water to help cook the chives through before burning, if needed.
  • To serve:
  • Preheat the oven to 500 degrees F.
  • Heat a large skillet with a little oil. Sear the birds breast side down and then put in the oven until golden, 2 to 3 minutes. Then turn the birds and repeat the process on the other side, cooking until the birds are cooked and the rice is heated through.
  • Serve the whole quail on a bed of chive buds with a few dots of scallion oil to garnish the plate.

STICKY RICE WITH CHINESE SAUSAGE AND DRIED SCALLOPS

Sticky Rice with Chinese Sausage and Dried Scallops image

Provided by Bruce Cost

Categories     Wok     Pork     Rice     Shellfish     Side     Steam     Stir-Fry     Sausage     Scallop     Gourmet     Sugar Conscious     Dairy Free     Tree Nut Free

Yield Makes 8 to 10 side-dish servings

Number Of Ingredients 15

2 1/2 cups Chinese or Japanese short-grain sticky ("sweet") rice
6 to 8 (1-inch-wide) large dried scallops
1/2 cup Chinese rice wine such as Shaoxing or medium-dry Sherry
12 to 15 Chinese dried black mushrooms
4 links Cantonese sweet sausage
2 bunches of scallions
1/4 cup oyster sauce (preferably premium)
2 tablespoons light soy sauce
1 tablespoon sugar
1 teaspoon kosher salt
1/4 cup peanut oil
2 tablespoons Asian sesame oil
2 teaspoons black pepper
Special Equipment
a well-seasoned 14-inch wok, preferably flat-bottomed; a 10-inch bamboo steamer with 2 tiers; cheesecloth

Steps:

  • Cover rice with cold water by 1 inch in a bowl and soak at least 4 and up to 12 hours.
  • After rice has soaked at least 3 hours, fill wok with enough water for bottom rim of steamer (not rack) to rest in water, then bring to a boil.
  • Put scallops and rice wine in a small heatproof bowl. Put bowl with scallops in bottom tier of steamer and steam, covered, until soft, about 2 hours. (Replenish water as necessary to keep bottom rim of steamer in water to prevent scorching.)
  • When scallops have steamed for almost 1 hour, line bottom and side of top tier of steamer with several layers of cheesecloth, then set tier onto steamer in wok.
  • Drain rice in a sieve and rinse well under cold running water, then spread rice in an even layer over cheesecloth in steamer (cheesecloth should not hang over edge of steamer) and steam, covered, sprinkling rice with a few drops of water occasionally, 1 hour. (Replenish water as necessary to keep bottom rim of steamer in water to prevent scorching.)
  • Meanwhile, soak mushrooms in 2 cups boiling-hot water in a bowl (water should cover mushrooms), turning mushrooms over occasionally, until softened, about 30 minutes. Cut out and discard stems from mushrooms, then squeeze excess liquid from caps into bowl and thinly slice caps. Reserve 1/2 cup mushroom- soaking liquid and discard remainder.
  • Remove top tier of steamer from wok and transfer rice from cheesecloth to a platter. Once rice has cooled, lightly wet your hands and break up large clumps.
  • Using tongs, remove bowl containing scallops from bottom tier of steamer. Reserve water in wok.
  • Reserve scallop-soaking liquid and shred scallops into "threads" with a fork or your fingers, discarding tough muscle on side (muscle will remain solid but scallop meat will shred easily).
  • Bring water in wok to a boil, then arrange sausages on a heatproof plate and steam in steamer, covered, 5 minutes. When cool enough to handle, halve sausages lengthwise, then cut diagonally into 1/4-inch-thick slices.
  • Cut scallions into 1/4-inch-thick slices, keeping pale green and white parts separate from dark green parts.
  • Stir together oyster sauce, soy sauce, sugar, and salt in a bowl until sugar is dissolved.
  • Pour off water from wok and dry. Heat wok over high heat until a bead of water vaporizes within 1 to 2 seconds of contact. Pour peanut oil down side of wok, then swirl oil, tilting wok to coat sides. Add mushrooms and pale green and white parts of scallions and stir-fry 1 minute. Add sausage and scallops and stir-fry 1 minute. Add rice and stir-fry, breaking up any clumps, 1 minute. Add scallop- and mushroom-soaking liquids along with oyster sauce mixture and stir-fry until rice is well coated and hot, about 2 minutes. Add sesame oil, then add pepper and remaining scallion greens and stir-fry until combined well.

Tips:

  • Soak the sticky rice for at least 4 hours, or overnight. This will help the rice to cook evenly and prevent it from becoming too dry.
  • Rinse the sticky rice thoroughly before cooking. This will remove any excess starch and help to prevent the rice from sticking together.
  • Use a heavy-bottomed pot or Dutch oven to cook the rice. This will help to distribute the heat evenly and prevent the rice from burning.
  • Bring the water to a boil before adding the rice. This will help to prevent the rice from becoming mushy.
  • Reduce the heat to low and simmer the rice for 15-20 minutes, or until the rice is cooked through. Do not stir the rice during this time, as this can cause it to become sticky.
  • Once the rice is cooked, remove it from the heat and let it stand for 5 minutes before serving. This will allow the rice to absorb any remaining moisture.
  • Serve the sticky rice with Chinese sausage, dried scallops, and your favorite dipping sauce.

Conclusion:

Sticky rice with Chinese sausage and dried scallops is a delicious and easy-to-make dish that is perfect for a weeknight meal or a special occasion. The combination of sticky rice, savory sausage, and umami-rich scallops is sure to please everyone at the table. So next time you're looking for a new and exciting way to enjoy sticky rice, give this recipe a try!
