Food & Wine Magazine, August 2008 edition. From Pairing of the Day: August 2008, Great Chicken Recipes: Wings, Breasts, Drumsticks and Thighs. Grace Parisi prepares a wonderfully sticky and nicely sweet glaze of fresh plums and red pepper jelly to brush over drumsticks while grilling. Hot red pepper jelly makes for a spicier glaze, sweet pepper jelly creates a milder one. We opted for the milder one because we made it for the home but we made a batch of the spicier glaze for us and it was wonderful! This is a fantastic and tasty recipe for the grill and the summer.Suggested wine: Juicy Primitivo: 2006 . Serve with the drumsticks, corn on the cob with any of the outrageous butter recipes on zaar, a yummy mixed-greens salad with garbanzo beans, bacon, sesame seeds and a champagne vinaigrette, and then for dessert something chocolate and DECADENT! ;)

SWEET-AND-STICKY GRILLED DRUMSTICKS

Sweet-and-Sticky Grilled Drumsticks image

The syrupy glaze on these barbecued drumsticks results in a tangy, caramelized coating. We slow-grilled the chicken over medium-low heat to prevent flare-ups from the dripping sauce. Green-Cabbage Coleslaw makes a crisp side dish.

Categories     Food & Cooking     Ingredients     Meat & Poultry     Chicken

Number Of Ingredients 8

1 1/2 cups dry red wine
1 cup plus 2 tablespoons packed dark-brown sugar
1/2 cup low-sodium soy sauce
2 tablespoons finely grated fresh ginger
1 garlic clove, minced
8 chicken drumsticks, skin on
Coarse salt
Green-Cabbage Coleslaw with Vinaigrette

Steps:

  • Bring wine, sugar, soy sauce, ginger, and garlic to a boil in a saucepan. Reduce heat, and simmer until mixture has thickened to the consistency of honey, 35 to 40 minutes. Let cool.
  • Using a sharp knife, make three diagonal slashes through the skin and flesh on both sides of each drumstick (this will help the flavors permeate the meat).
  • Preheat grill to medium-low. (If you are using a charcoal grill, coals are ready when you can hold your hand 5 inches above grill for just 7 seconds.) Place drumsticks on grill, and brush with sauce. Close cover, and grill 4 minutes. Flip chicken, and brush with sauce. Continue to cook, flipping and brushing with sauce every 4 to 5 minutes, until cooked through, about 20 minutes total. Season with salt. Serve with coleslaw.

Tips:

  • Choose the Right Drumsticks: Select plump and evenly sized drumsticks for even cooking.
  • Make the Marinade Ahead: Marinate the drumsticks for at least 30 minutes, or up to overnight. This allows the flavors to penetrate the chicken.
  • Preheat the Grill: Preheat your grill to medium-high heat before adding the drumsticks. This will help create a nice sear and prevent the chicken from sticking.
  • Cook Indirectly: Grill the drumsticks indirectly over medium heat. This will help prevent them from burning and ensure that they cook evenly.
  • Use a Meat Thermometer: Insert a meat thermometer into the thickest part of the drumstick to ensure that it has reached an internal temperature of 165°F (74°C).
  • Make the Plum Sauce While the Chicken Cooks: This saves time and allows the flavors to develop.
  • Baste the Drumsticks: Baste the drumsticks with the plum sauce during the last few minutes of cooking. This will help them develop a sticky glaze.
  • Let the Drumsticks Rest: Let the drumsticks rest for a few minutes before serving. This allows the juices to redistribute and makes them more tender.

Conclusion:

These sticky grilled drumsticks with spicy-sweet plum sauce are a delicious and easy-to-make dish that is perfect for any occasion. The marinade and sauce are packed with flavor, and the chicken is cooked to perfection. Serve these drumsticks with your favorite sides, such as rice, grilled vegetables, or a simple salad. Your friends and family will love this recipe!
