GORDON RAMSAY'S STICKY LEMON CHICKEN
I found this recipe on a youtube video of Gordon Ramsey making this on one of his British cooking shows. These turned out pretty good and the flavors are fantastic! You can watch the video if that would be helpful! In it, he used whole chicken legs/thighs still attached together. I only had Chicken legs and they turned out great! You could probably use the bone-in chicken thighs. This is very easy and the lemon aroma will make your home smell so heavenly!

- Preheat the oven at 200C/400°F.
- Place the peppercorns into a pestle and mortar and grind until roughly crushed. Add these to a large bowl together with the lemon juice, honey, mustard and garlic and mix well.
- Place the chicken thighs into a large roasting tin and pour the lemon and honey mixture over the chicken, leaving it to marinate for as long as possible. Sprinkle with sea salt, to taste, then cook in the hot oven for 45 minutes, turning halfway through cooking so that the thighs become lovely and sticky.
- Meanwhile, cut the preserved lemons open and remove the soft flesh to leave you with just the skin (discard the flesh). Cut the skin into strips and toss together with the olives and parsley. When the chicken is ready, serve sprinkled with the olive, parsley and preserved lemon mixture.

Steps:
- Heat oven to 220C/200C fan/gas 7. Put the chicken in a shallow roasting tin, drizzle over the oil and season well. Roast for 25 mins.
- Meanwhile, make the sauce. Tip the cornflour into a bowl and whisk in the lemon zest and juice until any lumps disappear. Add the honey, soy and sesame seeds and mix again.
- Remove the chicken from the oven. Pour over the sauce, making sure every piece is well coated - it will still be very runny at this stage. Return to the oven for another 8-10 mins, spooning the sauce over the chicken every 2-3 mins as it thickens. If the sauce gets too thick, add a splash of water and scrape any sticky bits from the bottom of the tin. Serve with noodles or rice, and veg, with the extra sauce poured over the top.

HONEY-AND-SOY-GLAZED CHICKEN THIGHS
In this simple weeknight recipe, chicken thighs are tossed with a sweet-salty glaze made of honey and soy sauce that caramelizes into a sticky coating as it roasts in the oven. Serve the sliced chicken with bibb lettuce cups for wrapping, or over steamed rice to catch all the juices. Leftovers can be chopped and combined with vegetables for a tasty clean-out-the-fridge fried rice.

Steps:
- Heat the oven to 425 degrees. Heat 1 tablespoon oil in a small saucepan over low heat. Add the garlic and ginger and cook, stirring occasionally, until softened, 3 minutes. Add the soy sauce and honey and simmer, stirring occasionally, until reduced and slightly thickened, about 10 minutes. (You'll want to cook attentively for this step, as the syrupy mixture can burn if it cooks too long.) Turn off the heat then whisk in the butter. Season with salt and pepper.
- On an aluminum foil-lined rimmed baking sheet, season the chicken all over with salt and pepper. Add half the glaze and the remaining 1 tablespoon oil and toss the chicken to coat. Arrange in an even layer, skin side up, and roast until browned, 15 minutes. Brush the chicken all over with 2 tablespoons of the remaining glaze. Roast until golden and cooked through, about 10 minutes.
- Drizzle the chicken with the remaining glaze and serve with lemon wedges.

Tips:
- Use a flavorful marinade: The marinade is what gives the chicken its delicious flavor, so be sure to use a flavorful blend of herbs, spices, and liquids. The recipe provided in the article uses a marinade made with lemon juice, honey, garlic, ginger, soy sauce, and olive oil.
- Marinate the chicken for at least 30 minutes: This will give the marinade time to penetrate the chicken and infuse it with flavor. If you're short on time, you can marinate the chicken for as little as 15 minutes, but the longer you marinate it, the better the flavor will be.
- Cook the chicken over medium heat: This will help to prevent the chicken from burning and ensure that it cooks evenly throughout.
- Baste the chicken with the marinade while it cooks: This will help to keep the chicken moist and flavorful. You can also add a little bit of honey to the marinade before basting the chicken to give it a nice glaze.
- Serve the chicken with your favorite sides: Sticky chicken thighs are delicious served with rice, noodles, or vegetables. You can also serve them with a dollop of yogurt or sour cream.
Conclusion:
Sticky chicken thighs with lemon and honey are a delicious and easy-to-make dish that is perfect for a weeknight meal. The chicken is marinated in a flavorful blend of herbs, spices, and liquids, then cooked until it is tender and juicy. The lemon and honey glaze gives the chicken a sweet and tangy flavor that is sure to please everyone at the table. Serve the chicken with your favorite sides for a complete meal.
