STICKY BUN BREAKFAST RING WITH CREAM CHEESE ICING

Sticky Bun Breakfast Ring With Cream Cheese Icing image

I found this recipe on pinterest, and it is the best and easiest sticky bun recipe I've ever made!!! The real goodness though lies in the cream cheese icing. You can skip it if you'd like, but my husband says it makes the sticky buns that much better, and the icing is so tasty that he'd eat it out of the bowl if I'd let him!!! Caution: Seriously Addictive!

Time 40m

Yield 1 ring, 8-10 serving(s)

Number Of Ingredients 11

2 (8 ounce) tubes refrigerated buttermilk biscuits or 1 (16 ounce) package Pillsbury Grands refrigerated buttermilk biscuits
3 tablespoons butter, melted
1/2 cup pancake syrup (any brand you like, I used Mrs. Buttersworth)
1/3 cup packed brown sugar
1/2 teaspoon cinnamon
1/4 cup chopped pecans (optional)
1 (3 ounce) package cream cheese
1/4 cup unsalted butter
1 cup confectioners' sugar
1/2 teaspoon vanilla extract
1/8 teaspoon salt

Steps:

  • Spray a fluted pan with non-stick spray.
  • Combine the melted butter and syrup in a small bowl and set aside.
  • In another bowl, combine the brown sugar, cinnamon, and nuts (if desired).
  • Place about half of the syrup mixture in the bottom of the pan.
  • Then sprinkle half of the brown sugar mixture on top.
  • Lay the biscuits on the bottom of the pan, overlapping edges (closely together) to form a ring.
  • Top with remaining syrup and sugar mixtures.
  • Bake at 375 degrees for approximately 20-25 minutes or until golden brown.
  • While baking, make the cream cheese icing by adding butter and cream cheese into a bowl and microwaving it until melted, about 1 minute.
  • Stir to combine, then add vanilla extract and salt, stir.
  • Then add the powdered sugar, 1/2 cup at a time, and whisk to get lumps out.
  • If icing is too thick for your taste, you can thin it out with a little heavy cream or milk.
  • When sticky buns are done baking, let cool for 1 minute in the pan, then invert onto a serving platter.
  • Pour cream cheese icing on top.
  • Enjoy!
  • ** I ended up using 1 1/2 tubes of the Pillsbury Grands buttermilk biscuits (1 tube didn't seem like enough) and baked it for about 30 minutes. It needed a bit longer to bake since I used more.

GOOEY CINNAMON BUNS WITH THICK CREAM CHEESE ICING

Gooey Cinnamon Buns with Thick Cream Cheese Icing image

Provided by Nancy Fuller

Categories     dessert

Time 3h5m

Yield 12 servings

Number Of Ingredients 14

1 package (2 1/4 teaspoons) active dry yeast
3 cups all-purpose flour, plus more for dusting the work surface
2 tablespoons butter, melted, plus more for buttering the bowl and baking dish
2 tablespoons granulated sugar
1/2 teaspoon salt
1 large egg, lightly beaten
2 cups pecans, roughly chopped
1 cup packed dark brown sugar
2 teaspoons ground cinnamon
1/2 teaspoon salt
1 stick (8 tablespoons) unsalted butter, melted
4 ounces cream cheese, softened
2 cups confectioners' sugar
1/4 cup milk

Steps:

  • For the dough: Place the yeast and 1 cup lukewarm water in the bowl of a stand mixer and whisk to combine. Fit the mixer with the dough hook and add the flour, butter, granulated sugar, salt and egg. Knead on medium-low speed until the dough forms a ball and releases easily from the sides of the bowl, about 4 minutes.
  • Butter a large bowl; transfer the dough to the bowl. Cover with a towel and set aside in a warm, draft-free place until the dough has doubled in size, about 1 1/2 hours.
  • Preheat the oven to 375 degrees F. Butter a 9-by-13-inch baking dish.
  • For the filling: In a medium bowl, stir together the pecans, brown sugar, cinnamon, salt and butter. Set aside.
  • Punch down the dough, then roll or press it into a 16-by-12-inch rectangle on a lightly floured surface. Spread with the filling, leaving a 1/2-inch border.
  • Starting at one of the short ends, roll the dough into a cylinder and then slice into 12 rolls. Arrange the rolls, cut-side up, in four rows in the prepared baking dish. Cover with a clean kitchen towel and leave to rise in a warm, draft-free spot until nearly doubled in volume, about 45 minutes. Uncover and bake until golden on top, about 20 minutes.
  • For the thick cream cheese icing: Blend the cream cheese and confectioners' sugar in a stand mixer fitted with the paddle attachment. Add the milk and mix until smooth. Top the warm cinnamon buns with icing and serve.

Tips:

  • For a gooey center, ensure the cream cheese filling is cold before spreading it over the dough.
  • To achieve a crispy-golden crust, brush the ring with melted butter before baking.
  • If you prefer a sweeter glaze, add more powdered sugar to the cream cheese icing.
  • For a professional touch, sprinkle chopped nuts or cinnamon sugar on top of the iced ring.
  • Store any leftover ring in an airtight container at room temperature for up to 3 days.

Indulge in the delightful Sticky Bun Breakfast Ring with Cream Cheese Icing, a delectable pastry that combines the comforting flavors of cinnamon, sugar, and cream cheese in every bite.
