STEWED OKRA AND TOMATOES

Stewed Okra and Tomatoes image

This is one of my favorite side dishes. It is good with good ole southern food. I like to make it when I make chicken fried steak and mashed potatoes....fried pork chops and macaronni and cheese; you've got the idea...very comforting and old school.

Categories     Vegetables

Time 35m

Number Of Ingredients 7

1 onion, chopped
3 c sliced okra
1 can(s) (14.5 oz) diced tomatoes, do not drain
1 tsp chopped garlic
1/2 tsp kosher salt
1/2 tsp black pepper
2 Tbsp canola oil

Steps:

  • 1. In a heavy bottom pot, heat oil
  • 2. Add the onion and garlic; sauté until tender, about 3 minutes.
  • 3. Add the okra and tomatoes, salt and pepper.
  • 4. Simmer for 15 minutes.
  • 5. Note: If needed, add water or chicken stock if the pot becomes too dry.

Tips:

  • Choose fresh okra: Look for slender, brightly colored okra pods that are free of blemishes and bruises. Avoid pods that are too large, as they may be tough and fibrous.
  • Trim the okra properly: Cut off the stem end and the pointed tip of each okra pod. You can also peel the okra if desired, but this is not necessary.
  • Soak the okra in vinegar: This helps to reduce the okra's sliminess. Soak the okra in a mixture of equal parts vinegar and water for 30 minutes before cooking.
  • Cook the okra over medium heat: High heat will make the okra tough and slimy. Cook the okra over medium heat until it is tender, about 15 minutes.
  • Add tomatoes and spices: Tomatoes add a delicious flavor to stewed okra. Add diced tomatoes, garlic, onions, and your favorite spices to the pot and cook until the tomatoes are softened and the spices are fragrant.
  • Serve over rice or mashed potatoes: Stewed okra is a delicious and versatile dish that can be served over rice, mashed potatoes, or your favorite side dish.
