STEVIA COCONUT PEANUT BUTTER COOKIES

Stevia Coconut Peanut Butter Cookies image

Stevia is a South American herb that is virtually calorie-free and hundreds of times sweeter than table sugar (which is why you only need 2 tsp in a recipe that might need a 2 cups of sugar). You can probably find it at your local health food store and I know Trader Joe's carries it with their baking goods. This recipe is from "Stevia Sweet Recipes" by Jeffrey Goettemoiller and I got it from www.rochestergoodfood.com.

Tips:

  • Use room temperature ingredients: This will help the cookies come together more easily and bake more evenly.
  • Don't overmix the dough: Overmixing can make the cookies tough. Mix just until the ingredients are combined.
  • Chill the dough before baking: This will help the cookies hold their shape and prevent them from spreading too much.
  • Bake the cookies at a high temperature: This will help them get crispy on the outside and chewy on the inside.
  • Let the cookies cool completely before storing them: This will help them keep their shape and prevent them from becoming too soft.

Conclusion:

These Stevia Coconut Peanut Butter Cookies are a delicious and healthy way to satisfy your sweet tooth. They're made with all-natural ingredients and are sweetened with stevia, so they're a good option for people who are watching their sugar intake.
