2 cups whole wheat flour
1 tablespoon baking powder
1/2 teaspoon salt
1/2 teaspoon stevia, concentrate powder
1/4 cup walnuts (chopped)
2 eggs
1/4 cup unsweetened applesauce
1 1/2 cups carrots (grated)
1/2 cup zucchini (grated)
1/2 cup half-and-half
1 cup plain fat-free yogurt
1 tablespoon pumpkin spice

Steps:

  • Cream all moist ingredients together except eggs.
  • Add stevia and mix well.
  • Add eggs mixing well.
  • Then add the remaining ingredients and stir.
  • Place in a greased cake pan and bake at 350 for 35-40 minutes.

2 cups grated carrots
1 cup whole wheat pastry flour
1 cup unbleached flour
2 tablespoons soy flour
2 teaspoons baking powder
1 teaspoon baking soda
1 1/2 teaspoons cinnamon
1/4 teaspoon salt

  • • Preheat the oven to 350ºF. Oil an 8 to 9-inch springform pan or a 6 x 10-inch cake pan. • Soak the coconut in the pineapple and juice. The batter will be stiff. • Spoon the batter into the cake pan, and bake for 1 hour. Cool in the pan. • Release the pan and top with Cream Cheese Frosting.
