This is the 'famous' toasted tuna sandwich that was served in my Catholic school cafeteria. Who knows why they called them tuna bumsteads, but they did.. Use Miracle Whip for the real-deal, but I know a lot of folks don't like it so use mayo if you're, ahem, 'one of them'.. lol..

4 tablespoons Miracle Whip
4 hard-boiled eggs, peeled and chopped

1/2 lb cubed cheese, american or cheddar
3 hard-boiled eggs, chopped
2 tablespoons chopped green peppers
2 tablespoons chopped onions

2 tablespoons sweet pickle relish
1/2 cup mayonnaise

To keep layers from falling over, skewer them on a spindle or with a bamboo skewer. This when broken down actually makes 5 separate sandwiches but the presentation is something else, especially for a football game party! From a pamphlet at my local deli.

assorted fresh greens (green leaf, shredded romaine, red leaf, and Boston lettuces)
1/4 lb monterey jack cheese, sliced

1/4 lb oven-roasted turkey breast, thinkly sliced
